Cheddar Bay Biscuit Egg Breakfast Casserole

Red Lobster’s Cheddar Bay Biscuit Mix is the ingredient you didn’t need in your egg breakfast casserole!  All you need to do is mix up your biscuit mix, dollop it over eggs, and bake!

Cheddar Bay biscuits from Red Lobster are the perfect combination of cheesy, buttery, and savory.  Your family will go crazy over this easy and inexpensive Cheddar Bay Egg Breakfast Casserole.

This Cheddar Bay Biscuit Breakfast Casserole is filled with fantastic flavor and is the perfect new recipe to serve at brunch this holiday season!  This casserole is also delicious for breakfast, lunch, and dinner.  This casserole is filled with protein and only needs easy ingredients.

When I was growing up in the 90s, a trip to Red Lobster was a one-a-year treat, and we always looked forward to the buttery and flakey biscuits!  Remember to brush the biscuits with melted butter when you make this meal!

Ingredients

1 cup of diced ham- You can also use breakfast sausage or bacon

1/4 cup diced onion

Two teaspoons of minced garlic 

One teaspoon of Cajun seasoning – or your favorite seasoning.

12 large eggs

1/2 cup of whole milk

Salt and pepper to taste

One package of Red Lobster Cheddar Bay Biscuit Mix and seasoning packet.

One heaping cup of shredded sharp cheddar cheese

1/4 cup of melted butter

Optional: parsley

Equipment

9X12 baking dish

Cooking Spray or Parchment Paper 

large bowl 

Pastry Brush 

Cookie Scoop 

 

Instructions

1. Preheat the Oven: Preheat your oven to 350°F. Grease a 9×13-inch  baking dish with cooking spray.

2. Saute onions, ham, garlic and seasonings.  Set aside

3. Prepare the Biscuit Mix: In a mixing bowl, prepare the Cheddar Bay Biscuit Mix according to the package instructions. Usually, you’ll need to add water and the sharp cheddar cheese to the mix.  Set aside biscuit dough.

4. Prepare the Egg Mixture: In another bowl, whisk together the eggs, milk, salt, pepper, Cajun seasoning, ham, garlic, and onions. Until well combined.

5. Assemble Casserole.   In a casserole dish sprayed with cooking spray, pour the egg mixture.  Drop the biscuit mix onto the casserole using a cookie scoop.

6.  Bake for 30 minutes.  After 15 minutes. Mix the seasoning mix that came in the box with melted butter and brush the butter mixture over the tops of the biscuits.  Return the casserole to the oven to bake for the remaining time until the top is golden brown.

Storage: Store leftovers in an airtight container in the fridge for up to five days.  I don’t recommend storing your leftovers in the freezer.  You can warm up leftover slices in the microwave.

You can add ingredients to this casserole based on your taste.  Green onions, chopped bell peppers, or other veggies would make great additions to this casserole. You can add additional seasonings for more flavor. Onion powder and garlic powder would taste great in this casserole.

  • 1/4 cup melted butter

Yes! Walmart offers a Gluten-free Red Lobster Cheddar Bay biscuit mix.  You will want to use that with a gluten-free condensed soup.
