Greek Chicken Salad

You will love this flavorful, bright, and crunchy Greek-inspired chicken salad! It’s super easy to make and makes a delicious lunch or dinner when it’s hot outside! 

This easy Greek chicken salad combines the creaminess of mayo and yogurt with tangy Greek flavors for a delicious and refreshing dish. The kalamata brine adds a unique salty depth. This meal is full of protein.

I have the perfect chicken salad if you want to switch up lunchtime or have something cold and ready to eat in the fridge this summer!  This salad has all your favorite Greek flavors, and the recipe can be adapted to fit your tastes.

Prep time:- 5-10 minutes

Ingredients:

2 cups cooked and shredded chicken- I prefer using grilled chicken breast

1/2 cup mayonnaise

1/2 cup plain Greek yogurt

One tablespoon of kalamata olive brine

1/2 cup chopped cucumber

1/2 cup halved cherry tomatoes

1/4 cup chopped kalamata olives

1/4 cup crumbled feta cheese

Two tablespoons chopped dried or fresh dill

Salt and freshly ground black pepper to taste

Optional Ingredients: Oregano, lemon juice, olive oil, red wine vinegar, a dollop of Greek salad dressing, and garlic would make great additions to this salad! You can also choose to garnish with lemon zest.

Instructions:

  1. Combine the mayonnaise, Greek yogurt, and kalamata olive brine in a large bowl. Whisk until smooth.
  2. Add the shredded chicken, red onion, cucumber, cherry tomatoes, kalamata olives, feta cheese, and dill. Gently toss to combine.

3. Season with salt and freshly ground black pepper to taste. (You may want to go lighter on the salt first, as the feta and olive brine already contribute some.)

4. Cover the bowl and refrigerate for at least 30 minutes or overnight to allow the flavors to marinate.

  • 1-2 tbsp fresh or dried dill
  • 1/4 cup chopped kalamata olives
  • 1/2 cup chopped cucumber
  • 1/2 cup halved tomatoes
  • 1/4 cup crumbled feta cheese

Instructions

Serving ideas
