Canned Fried Cinnamon Apple Muffins

These cinnamon apple muffins are perfectly moist and rich in cinnamon apple flavor!  All you need is a few easy ingredients for this super easy muffin recipe! 

Prep time: 10 mins

Bake time: 23 minutes

Total time: 35 minutes

Ingredients

One cup of all-purpose flour

1/2 teaspoon of baking powder

1/2 teaspoon baking soda

1/4 teaspoon of salt

One cup of canned fried cinnamon apples.  Do not drain the apples.

1/3 cup of vegetable oil or melted butter.  You can use canola oil or coconut oil as well.

1/3 cup of sugar

One tablespoon of pure vanilla extract

One egg

Optional additional ingredients: you can add pecans, walnuts, or another nut.  You can also choose to make a cinnamon sugar topping or streusel topping to the top of these muffins.

Equipment

muffin tins or muffin pan.

Cooking Spray

Where do you find canned cinnamon-fried apples?

I buy canned cinnamon apples at Aldi in the canned fruit section.   You can also buy this brand of fried canned apples.  If you can’t find canned fried apples, you can use pie filling, but I would omit the sugar from the recipe if you choose to use pie filling.

You can also choose to make cinnamon apples on the stove to use in this recipe.  When making cinnamon apples on the stove, I like to use a granny smith/Honeycrisp combo and saute them on the stove with brown sugar, a teaspoon of ground cinnamon, two teaspoons of vanilla extract, and a little lemon juice.

Instructions

  1. Preheat the oven to 350 degrees f
  2. In a mixing bowl, whisk together dry ingredients: flour, salt, baking soda, and baking powder.  Set aside.
  3. Mix wet ingredients in a second mixing bowl: oil, canned apples, vanilla extract, sugar, and egg.
  4. Add the wet ingredient mixture to the dry ingredients.  Stir well.
  5.  Using a cookie scoop, fill the muffin tins with batter.
  6. Cook in the oven for 20-23 minutes.  Ensure a toothpick can come out clean before removing it from the oven.  You can sprinkle powdered sugar on top if you like.
  7. Let muffins cool and serve.

  • 1/3 cup sugar
  • 1 teaspoon pure vanilla extract

Storage

These can be stored in an airtight container in the fridge for five days or at room temperature for two days.   You can store these in the freezer in a freezer bag for up to three months.  Avoid storing these in the fridge so they don’t dry out.

The texture of these muffins is similar to cake.  Feel free to ice these with frosting and turn them into delicious cupcakes!
