Boxed Scalloped Potatoes Chicken Casserole

If you have a box of scalloped potatoes in your pantry, you NEED to make this easy, comforting, creamy potato chicken casserole!

Total time: 40 minutes

The American casserole came to be using leftovers to make an entirely new comforting meal!  If you have a box of cheesy scalloped potatoes left over from the holiday, I recommend using it for this delicious comfort food dish!!  All you need is a few ingredients, and your family will not feel like they are eating leftovers!!!

Ingredients:

  • One box of scalloped potatoes (and the ingredients listed on the box, usually including potatoes, sauce mix, and milk)
  • 1 pound cooked boneless, skinless chicken breasts or thighs, diced
  • One small onion, finely chopped
  • One garlic clove, minced
  • 1 cup shredded cheese
  • One 10.5-ounce can of cream chicken soup
  • 1 cup of milk
  • 2 cups of broccoli
  • Salt and black pepper, to taste
  • Optional: chopped fresh parsley for garnish

Optional ingredients:  You can substitute the chicken with another protein, such as ham or turkey.   You can also use peas or mixed vegetables in place of the broccoli.  Any cheese will work with this casserole.  If you don’t have garlic, garlic powder will work.  And for a richer flavor, you can add some heavy cream.

Boxed Scalloped Potatoes- any brand will work, but I prefer General Mills.

Instructions:

  1. : Preheat your oven according to the scalloped potatoes’ package instructions.
  2. In a large mixing bowl, combine cooked chicken, onions, garlic, broccoli, cream of chicken soup, and shredded cheese. Mix well to combine all the ingredients evenly. Set aside.
  3.  Assemble casserole.  Place your scalloped potatoes in a greased casserole dish and sprinkle the contents from the cheese packet, boiling water, warmed-up milk, and butter.  Mix until combined.  Transfer the chicken-broccoli mixture over the potato mixture and mix, spreading everything out evenly.
  4. Bake according to the instructions on your scalloped potato package.  Make sure to have the amount of water listed on the box.  Cut the casserole with a knife to ensure the potatoes are tender before removing them from the oven.

Can you cook this in your crock pot?

Yes, this casserole can be made in a slow cooker.  Add the ingredients to a greased slow cooker and cook on low for 4-6 hours.

  • 1 teaspoon minced garlic
  • 1 teaspoon Herbs de province
  • 1 cup shredded cheese
  • 1 10.5 ounce can condensed chicken soup
  • 2 cups broccoli
  • salt and pepper to taste

Instructions

  1. Preheat the oven according to the scalloped potato directions on the box.

  2. In a large mixing bowl, combine cooked chicken, onions, garlic, broccoli, cream of chicken soup, and shredded cheese. Mix well to combine all the ingredients evenly. Set aside.

  3. Assemble casserole.  Place your scalloped potatoes in a greased casserole dish and sprinkle the contents from the cheese packet, boiling water, warmed-up milk, and butter.  Mix until combined.  Transfer the chicken-broccoli mixture over the potato mixture and mix, spreading everything out evenly.
