Have you seen the viral tiktok chicken cobbler recipe? Creamy chicken pot pie casserole recipe is baked in the oven all in one baking dish, making this a super easy and easy weeknight casserole dish.  This meal has many veggies and is the perfect comfort food after a long day of work and school!

Growing up in the 90s, a trip to Red Lobster was a once-a-year treat, and we always looked forward to the buttery and flakey biscuits! Remember to brush the biscuits with melted butter when you make this meal!

As the weather gets cooler, you may look for new comfort food recipes for your family.  This meal will remind you of a classic chicken pot pie but is easier to make because you won’t need to mess with a pie crust.

Ingredients Needed 

One 10.5-ounce can of condensed cream of chicken soup

One cup of whole milk- you can also use 1 cup of chicken broth or chicken stock for a less creamy consistency

One teaspoon of dried thyme

One teaspoon of salt and pepper blendyou can also use salt and black pepper.

Two cloves of minced garlic

Two cups of cooked shredded chicken or chicken cut into chunks – You can use leftover chicken, shredded rotisserie chicken, or chicken breasts cut up.

1 cup of canned corn

3/4 cup of carrots cut into thin discs.

1 cup of chopped frozen, thawed green beans

One 11-ounce Cheddar Bay Biscuit Mix

1 cup of shredded sharp cheddar cheese

1/4 cup of melted butter

Optional Ingredients and Variations: You can use frozen mixed vegetables instead of the ones above, such as celery, onions, or frozen peas. You can also add your favorite seasonings instead of the ones I have listed above. For more flavor, you can add onion powder and garlic powder to taste. You can choose to melt additional cheese on top.

Instructions

1. Preheat oven to 350 Degrees Fahrenheit

2. combine condensed soup, milk, seasonings, and garlic in a mixing bowl.  Mix well.

3. Add chicken and vegetables. Stir well.

4. Pour the casserole mixture into a greased casserole dish.

5. In a second bowl, mix the cheddar bay biscuit mix with water and cheese according to the box’s instructions.

6. Dollop the biscuit batter on top of the casserole.

7. Mix the seasoning packet from the biscuit mix with butter and brush the top of the biscuits.

8. Bake for 35 minutes or until the biscuits are golden brown and the casserole is bubbling.

Sprinkle with parsley for color if you like.

Storage:

If you have leftovers, you will want to store them in an airtight container in the refrigerator for up to five days.  You can also store them in the freezer. You can microwave leftovers.

Can you make this recipe gluten-free?

Yes! Walmart offers a gluten-free red Lobster Cheddar Bay biscuit mix.  You will want to use that with a gluten-free condensed soup.

What if you don’t have cooked chicken?

You can add small chunks of uncooked chicken to this casserole.  I recommend cooking the casserole without the biscuit mix in the oven for 20 minutes before adding the biscuit mix. This way, you can be confident that your chicken is cooked sufficiently.

This chicken, baked in a creamy sauce and topped with a biscuit topping, is the perfect comfort meal after a long day at work or school! Feel free to add just a bag of frozen vegetables instead of cutting each vegetable up individually.  Your whole family is going to love this super easy dinner!
