The potato cheddar and chive bakes, a new menu item from Starbucks, are delicious but expensive! I figured out a copycat recipe for you to make them at home!
Ingredients
One 24-ounce package of hashbrowns or diced potatoes from the grocery store’s refrigerator section.
1 cup cheddar cheese
Four large eggs
1 cup of whole milk, half and half, or heavy cream
Three tablespoons of olive oil
Two cloves of minced garlic
salt and black pepper
1/4 cup of fresh chives or an amount of chives based on your taste
Additional optional ingredients: You can add seasonings, depending on your flavor. Garlic powder and paprika. You can also add yellow onion, green onions, spinach, tomatoes, or bacon

muffin tin or a brownie pan if you want them to be square like the real ones.

Instructions
1. Preheat Oven: Preheat your oven to 375°F
2. Put hashbrowns in a large mixing bowl.
3. Add Cheese and Chives: Sprinkle the shredded cheddar cheese and chopped fresh chives over the layer of hashbrowns.
4. Prepare Cream Mixture: In a mixing bowl, whisk together the heavy cream, eggs, minced garlic, salt, and pepper until well combined.
5. Pour the egg mixture over the potato mixture and whisk.
6. Using a cookie Scoip, fill each muffin tin with the mixture.
7. Bake for 25 minutes. I recommend broiling for a few minutes at the end to get the potatoes crispy on the outside.
8. Remove from the oven and serve.
Storage:
Store in an airtight container in the refrigerator for up to five days. You can also store these potato egg bites in the freezer for up to three months. You will want to reheat them in the microwave.
