If you have a can of Mandarin oranges in your pantry, you should try making these easy delectable muffins. These are super moist, citrusy, and sweet. Perfect for snacks, brunch, breakfast, and even dessert.
My Crushed Pineapple Muffins have become one of the most popular recipes on my site. I decided to try the same recipe but add in delicious Mandarin oranges instead of the Crushed Pineapple. I was so happy with how these turned out. We always keep canned Mandarin Oranges in our pantry because my kids love eating them as a side dish with meals or for a quick snack.
Ingredients needed
One cup of Mandarin Oranges and juice– so one cup of mandarin oranges from the can and do not drain the juice.
1/3 cup of sugar
1/3 cup of vegetable oil or melted butter ( please do not use margarine or spreadable butter)
One teaspoon of vanilla extract
One egg
1 cup of all-purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional Add-Ins: orange zest, orange extract, ginger, nutmeg, dried cranberries, wild blueberries, or pecans would taste great with the flavor profile.
Equipment
Muffin liners or silicone muffin cups
Oven
Hand Mixer or stand mixer
wire rack or cooking rack
Instructions
1. Preheat oven to 350 degrees.
1. Mix oranges, vanilla, oil, sugar, and egg in a large bowl. When you stir or mix, Press down to smash the oranges slightly. Make sure you beat the egg entirely. Set aside the orange mixture.
2. Stir dry ingredients in a second bowl. Flour, baking soda, baking powder, and salt.
3. Add dry flour mixture to the orange-egg mixture and mix well until you form a batter.
4. Using a cookie scoop, spoon batter into the muffin pan cups.
5. Bake in the oven for 20-23 minutes. Your muffins should be golden brown, and a toothpick should come out clean.
6. Remove from oven and let cool for at least 5-10 minutes before removing the muffin liner to eat.
You can store these muffins in an airtight container at room temperature for up to five days. You can also freeze them for up to a month. Storing these muffins in the fridge might dry them out.
