Baklava Salmon

by Kristen

Baklava Salmon is quick, easy, and mouthwatering!  Your family and friends will be impressed with this 30-minute restaurant-quality meal!

Total time: 30 mins

I grew up eating lots of Mediterranean food, and every time I find myself back in Chicagoland, I always have to take the time to visit the Greek Isles.   Sometimes, here in Iowa, I find myself in a very Mediterranean state of mind and have the only choice to make ( fill in the blank) cuisine in my own kitchen.

What makes this dish special?

The spices.  Cinnamon and Cloves are a great addition to otherwise savory meals.  This salmon is restaurant quality and is perfect for date night, a holiday entree,  a holiday brunch, or even a fancy weeknight meal!

What is Baklava?

Bakalava is a dessert popular in many countries of the Middle East, Central Asia, the Balkans, and the Mediterranean. Baklava has a honey and nut filling and is usually made in phyllo dough.

I dropped the phyllo dough that one would usually see when one thinks of Baklava, and I created a salmon recipe using just the nut filling.  This was a super-rich meal idea and is fancy enough to be served at a holiday meal.

Ingredients needed

One 3-4 pound piece of salmon.  You can also use 4-5 smaller salmon fillets

3/4  cup walnuts

3/4 cup salted pistachios

One teaspoon cinnamon

1/2 teaspoon ground cloves

1/4 cup granulated sugar

Three tablespoons honey

1/3 cup butter

Optional substitutions: olive oil instead of butter, and you can add other nuts such as almonds or pecans.

Equipment

Oven

Sheet Pan

Non-stick pan spray, non-stick aluminum foil, or parchment paper.

Instructions

1. Preheat oven to 400 degrees Fahrenheit.

2. pulse walnuts, pistachios, cinnamon, sugar, and ground cloves in your food processor.  You want the nuts chopped but not pulverized.

3. Line the baking sheet and place the salmon on the baking sheet.

4. Spoon the nut topping evenly over the salmon.

5. Drizzle honey over the nuts.

6. Cut butter into even slices and distribute it over the salmon.

7. Bake it in the oven for 15-20 minutes or until the salmon is cooked.

8. Remove from oven and serve immediately.

If you don’t. Have walnuts or pistachios at home. You can still make this salmon with other nuts in your pantry.  This dinner is filled with loads of protein and omega 3’s!
