Funeral Potato Chicken Bake

If you have ever had funeral potatoes during bereavement or otherwise, you will love this funeral chicken bake, which is a funeral potato upgraded to a chicken casserole!

My dad is from a small town, so I’ve experienced several small-town funeral church potlucks over the years. Although I didn’t know the name of this dish as a child, I was most definitely comforted by funeral potatoes at least a few times.

“Funeral potatoes” are the ultimate comfort potato dish. You bake potatoes with condensed cream of chicken soup, sour cream, and cheese, and my favorite part is topping the dish with crispy cornflakes and baking until the dish is hot, cheesy, and bubbling.

I have added shredded chicken to this recipe and turned it into a square meal instead of just a side dish.  This casserole was a huge hit with my family. We hardly had any leftovers at the end of dinner!

Ingredients

2 cups cooked and shredded chicken (rotisserie chicken works well)

Three cans of diced potatoes OR 1 (32 oz) package of frozen hash brown potatoes, thawed

One 10.5 oz can of condensed cream of chicken soup

1 cup  sour cream

One small onion, finely chopped

Two cups shredded  sharp cheddar cheese divided

1/2 cup unsalted butter, melted

2 cups crushed cornflakes

salt and black pepper to taste

green onion or chives for a garnish- optional

Optional Ingredients/variations: you can make this recipe with turkey or ham.  You can also switch up the type of cheese you use in this cheesy potato recipe.  If you don’t have cream of chicken soup, you can use cream of celery soup or cream of mushroom soup.   I have heard of people making this casserole with Ritz crackers or crushed potato chips.

This cheesy potato casserole recipe is perfect for funeral luncheons, Christmas, Thanksgiving, Easter, or any night of the week.

Instructions

1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish with cooking spray.

2. In a large bowl, combine the shredded chicken, potatoes, condensed cream of chicken soup, sour cream, chopped onion, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste. Mix until well combined.

3. Spread the chicken and potato mixture evenly into the prepared baking dish.

4. Stir the melted butter with the crushed cornflakes in a separate bowl until well-coated.

5. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the chicken and potato mixture in the baking pan.

6. Spread the buttered cornflake mixture over the top of the cheese layer, covering the entire surface.

7. Bake in the preheated oven for 35-40 minutes until the casserole is bubbly and the top is golden brown and crispy.

8. Remove the casserole from the oven and let it cool for a few minutes before serving.

Storage: Store in an airtight container in the fridge for up to 5 days
