Chicken Cordon Bleu Biscuit Casserole

Chicken Cordon Bleu Biscuit Casserole is a unique and delicious twist on the classic Chicken Cordon Bleu and is easy to make using leftover chicken and ham from your fridge!

This Chicken Cordon Bleu Cobbler combines the flavors of chicken, ham, and Swiss cheese with a cobbler topping, creating a comforting and delicious dish. 

Chicken Cordon Bleu has an interesting history that involves both French and Swiss culinary influences. The term “Cordon Bleu” is French for “Blue Ribbon.” Its culinary association dates back to the 16th century. The original dish,  Cordon Bleu, was a schnitzel variation in Switzerland known as “veal Cordon Bleu.”  In the United States, Chicken Cordon Bleu is typically made by wrapping chicken breasts around ham and Swiss cheese, then coating them in breadcrumbs and baking or frying. and has become an American Staple.  

Ingredients:

2 cups cooked and shredded chicken (rotisserie chicken works well)

1 cup deli ham, diced

1 cup Swiss cheese, shredded

One heaping tablespoon of Dijon mustard

2/3 cup mayonnaise

One tablespoon of lemon juice

One heaping teaspoon of minced garlic 

Salt and pepper to taste

1/4 cup parsley (optional)

One tube of premade buttermilk biscuits

One tablespoon of melted butter

Optional Ingredients- Mozzarella or provolone will work if you don’t have Swiss cheese.   You can also choose to substitute the mayonnaise with cream of chicken soup.  You can also choose to add panko bread crumbs, crumbled Ritz crackers, or bacon bits on top for added texture.  You can choose to add veggies to this casserole.  Spinach or Green beans will work great!  

Can I make this recipe with boneless, skinless chicken breasts? 

Yes! You can, but the cooking time will be different.  I recommend chopping the chicken breasts into 1-inch cubes and mixing them with the rest of the ingredients.  Your casserole needs to bake until the chicken is fully cooked to 165 F.

Mallet if you are using fresh chicken breasts 

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, diced ham, shredded Swiss cheese, Dijon mustard, mayonnaise, lemon juice, garlic powder, salt, and pepper. Mix everything well until the ingredients are evenly combined. Add chopped fresh parsley if desired.
  3. Transfer the chicken mixture to a greased baking dish.  You can also choose to mix everything in the baking dish.  

4. Pop open a tube of premade buttermilk biscuits, tear them up, and layer them over the chicken mixture.  Melt butter and brush over the biscuits.  You can choose to sprinkle more parsley on top. 

5. Bake in the oven for 30 minutes or until the casserole is bubbling and the biscuits are golden brown. 

6. Remove from oven and serve.

Storage: Store leftovers in an airtight container in the fridge for up to 5 days.  You can also store it in the freezer.
