If you are looking for a new brunch recipe, look no further! These muffin tin sausage MC griddles are so much fun and taste much better than an MC griddle from the drive-thru!

What is a McGriddle?

The Mc Griddle is one McDonald’s breakfast sandwich. The standard McGriddle consists of Bacon, sausage, egg, and cheese between maple-flavored pancakes. These muffin tin McGriddles are the perfect size to satisfy your breakfast craving without heading to McDonald’s.

All you need is a few breakfast ingredients, a muffin pan, and 30 minutes to make these adorable muffin-sized homemade MC griddles. Kids will love these. I made these using sausage, but you can easily substitute Bacon, ham, or Canadian Bacon.

Ingredients

2 cups of pancake mix

1 1/4 cups of milk

Three tablespoons of maple syrup

Four eggs

1 cup of shredded colby jack cheese – or your favorite cheese.  You can also use slices of cheddar cheese if that is all you have.

1/2 pound of cooked pork sausage links or sausage patties cut into pieces. I recommend maple sausage. Any breakfast sausage will work.

More maple syrup for dipping

Optional: Salt and Pepper to taste.

Can I make these gluten-free?

Yes! Choose gluten-free sausage, Bacon, and gluten-free pancake mix if you have a gluten allergy. You can also choose to use high-protein pancake mix to make them healthier.

Equipment

cooking spray for greasing muffin pan

12-cup muffin tin or mini muffin tin

Instructions

1. Preheat oven to 350 degrees

2. Mix pancake mix, milk, eggs, and maple syrup in a bowl. Whisk pancake batter until blended.

3. Gently stir in sausage pieces, cheese, and the other ingredients you are using.

4. Spray your muffin tin with cooking spray. PLEASE AVOID USING PAPER MUFFIN CUPS. Your muffins will stick to the paper if you use them in this recipe.

5. Add 1/4 cup of batter to each muffin or 3/4 if you use a mini muffin tin.

6. Bake in the oven for 23 minutes for regular-sized muffins and 11 minutes if using a mini muffin tin.

7. Remove muffins from the oven. Let muffins cool for at least 5 minutes before getting them out. Use a butter knife to “unstick” the sides of each muffin and pop them out.

8. Serve warm. You may want to use a mini spatula to get the mini pancakes out of the muffin tin.

Storage

You can store leftovers in an airtight container in the fridge for up to 3 days. You can reheat them in the microwave.

These are perfect for breakfast, dinner, holiday brunch, or snacks!

These were wonderful, also agree that cheese might have not been necessary but I was hoping my toddler would eat these as he doesn’t eat the ingredient separately, 10/10 would recommend for children!

Excellent but I’m not sure the cheese was necessary. I will make again for sure and cut some calories by omitting the cheese.
