Lemon Lime Poppyseed Bread

This lemon-lime poppy seed bread recipe is bright and citrusy, and you will love the fresh tart flavor of the extraordinary lemon-lime glaze. 

Spring and summertime are perfect for bringing this bright citrus-filled bread to your family gatherings. This lemon-lime poppy seed loaf has lemon juice, lemon zest, and lime zest.  Adding lime to a traditional lemon poppyseed bread recipe instantly upgrades it!  This bread is moist but still crumby.  Don’t forget to add the lemon-lime glaze.   The glaze puts this recipe over the top.

If you want to make this taste more like a dessert than a breakfast item, you can increase the amount of sugar and the amount of the glaze.  

Ingredients

2 cups of all-purpose flour

One teaspoon of baking soda

One teaspoon of baking powder

Four teaspoons of poppy seeds

¼ teaspoon salt

One egg

¾ cup of sugar

2/3 cup of vegetable oil or melted butter

1/2 cup of milk

Three tablespoons of lemon juice

Three tablespoons of lime juice

One tablespoon of lemon zest

One tablespoon of lime zest

Lemon-Lime Glaze

1 cup of powdered sugar

One tablespoon of fresh lemon juice

One tablespoon of fresh lime juice

Equipment

4×9 loaf pan

parchment paper or cooking spray

whisk or electric mixer

large bowl

toothpick

wire rack

oven

Instructions

  1. Preheat oven to 350 degrees. Spray your loaf pan with cooking spray.
  2. Mix dry ingredients: flour, baking soda, baking powder, salt, and poppy seeds.  Set aside.
  3. Mix egg, sugar, oil, milk, lemon juice, lime juice, lemon zest, and lime zest in a second bowl.
  4. Add flour mixture to the wet ingredients and mix them into a batter.

  1. Pour batter into a greased four by 9-inch loaf pan.
  2. Bake in the oven for 45 minutes.  Ensure a toothpick comes out clean to ensure the bread is ready before removing it from the oven.
  3. Make Glaze.  Whisk lemon and lime juice with powdered sugar.
  4. Poke holes in the loaf and pour the glaze over the bread while it is still warm.  This will help the glaze seep into the bread.
  5. Ensure the loaf is completely cooled before removing it from the pan and cutting it into slices to serve.

Ingredients

Storage

You can store the leftovers in an airtight container, freezer bag, or plastic wrap at room temperature for up to five days. I would avoid storing this in the fridge because it could cause the bread to dry out. Please make sure the bread is excellent before wrapping it in any plastic.

This lemon-lime poppyseed bread is so rich tasting that you can easily serve it as a cake instead of bread. This can be served as a simple breakfast on a weekday or dressed up for a bridal shower or a fancy dinner. This reminds me a little of the lemon poppyseed loaf available at Starbucks. ( but the addition of the lemon gives it a massive upgrade. You will love the lime lemon flavor.
