Mayonnaise Banana Bread Muffins

Mayonnaise is the secret ingredient you didn’t know your banana bread recipe needed! Mayonnaise is made of oil and eggs, which can easily be used in various baking recipes. Mayonnaise will help keep your banana bread moist for days and gives it a super-rich flavor!

Banana bread muffins are the perfect breakfast, lunch, snack, or dessert day or night.  These banana bread muffins are the ultimate comfort food and will always hit the spot.  This banana bread recipe has brown sugar and is loaded with ripe bananas.

Prep time: 10 minutes

Cook time: 20-25 minutes

Total time: 45 minutes

I grew up in Chicagoland, where a restaurant makes the famous ” mayonnaise chocolate cake.”  That gave me the idea to use mayo to make the richest-tasting banana bread muffins possible.  This is such a great recipe!  I might need to start using mayonnaise in more of my baked goods!

Ingredients

Three bananas mashed

One teaspoon vanilla

1 cup brown sugar 

One egg

⅔ cup of mayonnaise DO NOT use miracle whip in this recipe.  I recommend Hellmann mayonnaise.  

One ¼ cup all-purpose flour

½  teaspoon baking powder

½ teaspoon salt 

Additional add-in ingredients:  cinnamon, pecans, chopped walnuts, nutmeg, chocolate chips, peanut butter, or any other variations you like to add to your banana bread.

muffin tin

muffin liners

Instructions

1. Preheat oven to 350 degrees

2 In a large bowl, stir together wet ingredients.  Mashed Bananas, brown sugar, pure vanilla extract, egg, and mayonnaise.  Set aside

3. . In a separate medium bowl, whisk together dry ingredients: flour, baking powder, baking soda, and salt.

4.  Add the dry ingredients to the banana mixture to form a batter.

5. fold in any additional ingredients you add ( chocolate chips, nuts, etc.)

6. Add batter to each muffin tin 3/4 using the cookie scoop.

7. Bake in the oven for 20-25 mins or until the muffins are golden brown and a toothpick comes out clean.

8. Remove the muffins and place the muffins on a cooling rack.  Let the muffins cool for at least 10 minutes before serving.

How to convert this banana bread muffin recipe to a loaf banana bread recipe.

This recipe is so great that you may want to make it in a loaf pan.  This moist banana bread recipe can be baked in a loaf pan if you want banana bread instead of muffins.  You will want to double the cooking time to 45 minutes and lower the oven temperature to 325f.  If you make this recipe into a banana bread loaf, ensure it is cooked by making sure a toothpick comes out clean before removing it from the oven.

How ripe should your bananas be for this recipe?

The ripeness of your bananas can be a personal preference.  I like my bananas yellow with brown spots when I make banana bread.  If your bananas are not ripe enough, you can bake them in the oven for 10-15 minutes to soften them.
