My recipes for moose tracks cookie bars, and moose tracks cookies have been delicious! I decided to take the concept further and make moose ways banana muffins. These banana muffins have the same flavors as moose tracks ice cream but are baked into banana bread muffins. These muffins make a delicious dessert, brunch, breakfast, or snack. They will be a massive hit with your family and friends!
Ingredients
2 cups all-purpose flour
One teaspoon of baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup of mashed ripe bananas, two or three bananas
3/4 cup of brown sugar
1/2 cup of vegetable oil
Two tsp vanilla extract
Two large eggs
1/2 cup of small or crushed peanut butter cups
1/2 cup of hot fudge, warmed up
If you don’t have peanut butter cups, add peanut butter and chocolate chips or mini chocolate chips to get the same flavor. I prefer the peanut butter cups from Aldi or Trader Joe’s for this recipe, but Reese’s peanut butter cup leftover from Halloween will also do just fine.

Instructions
1. Preheat oven to 350 degrees. Line 18 muffin tins with liners or grease muffin tins
2. In a large mixing bowl, combine dry ingredients. Whisk Flour, baking powder, baking soda, and salt. Set aside.
3. Combine bananas, oil, vanilla extract, brown sugar, and eggs in a second bowl.
4. Add the dry and wet ingredients to form a batter.
5. Warm-up hot fudge in the microwave. Drizzle hot fudge into the batter with most peanut butter cups and fold in, but don’t over-mix them.
6. Fill each muffin tin 3/4 full with batter.
7. Top off each muffin with the leftover peanut butter cups.
8. Bake the muffins for 20-22 minutes or until a toothpick comes out clean.
9. let the banana muffins cool before serving.
Can I make this banana bread in a loaf pan?
Yes! You can make this recipe in a loaf pan; you will want to increase the baking time to 50 minutes.
