I have been learning to adapt to meals and use the ingredients. (When we wanted our favorite chicken gyro dinner, we opted for these delicious chicken gyro quesadillas instead because we didn’t want to make an unnecessary trip to the store.
I might just love these chicken gyro quesadillas better than the kind I make with pita bread! I LOVE how quesadillas are crunchy and melty! Plus, they take just minutes to make! I dunked these chicken gyro quesadillas in tzatziki sauce. Amazing!
Here is what you need for Chicken Gyro Quesadillas
Flour tortillas– or you can use corn if you’re gluten-free.
Mozzarella cheese or you can use a cheese of your choice.
Chicken
Olive Oil
Greek Seasoning
Tzatziki Sauce: (Dillweed, Greek Yogurt, Cucumber, onion powder, and lemon juice _
And garnishes: tomato, lettuce, onions, and cucumber.
And that’s it!
I made my Instant Pot Chicken Gyro filling for these quesadillas.
Chicken Gyro Quesadillas
Ingredients
Greek Chicken
- 2 chicken breasts
- 1 teaspoon Greek Seasoning
- 1 teaspoon minced garlic
- 1 teaspoon olive oil
- 2 tablespoon lemon juice
- 1/4 cup chopped onion
- 1/4 cup greek yogurt or sour cream
- 1/2 cup water
Quesadilla
- 2 flour tortillas per quesadilla
- 1/4 cup Mozzarella cheese per quesadilla
- 1/4 cup cooked greek chicken per quesadilla
Toppings
- tomato
- cucumber slices
- red onion
- feta cheese
- kalamata olives
- lettuce
Tzatziki Sauce
- 1 cup Greek Yogurt
- 1 tablespoon dried dill
- 1/2 cup chopped cucumber
- 1 teaspoon onion powder
- dash pepper
- 1/2 teaspoon lemon juice
Instructions
Greek Chicken

Place all of the ingredients for the Greek chicken in your Instant Pot. Chicken, onion, Greek Yogurt, garlic, lemon juice, Greek seasoning and olive oil.

Cook on high pressure for 12-15 minutes.

Either let it naturally release or release pressure right away. It doesn't matter.

Shred chicken for the gyro quesadillas.
Build your quesadilla

heat up a skillet over medium heat.

Between two flour torillas, place chicken, cheese and other toppings if you desire. brush the outside of the tortilla with olive oil if desired.

Cook on the sklllet, flip over when the first side is done cooking and slightly crispy.

garnish with vegetables and dip in tzatziki sauce as needed.
