Growing up, my mom’s meatloaf was always one of my favorite meals. Now, I have taken my favorite meatloaf recipe, and transformed it into Instant meatloaf balls- These meatloaf balls had a cook time of merely 8 minutes, and my kids loved them!
Can I tell you my two favorite things about meatloaf?
- The glaze. You can never have enough meatloaf glaze.
- Using the leftover meatloaf for a meatloaf sandwich the next day. I took meatloaf sandwiches in my school lunch a lot when I was a kid, and I always loved them.
These meatloaf balls are cooked in the glaze, which makes them taste even more amazing. This is a super easy weeknight meal to make because these meatloaf balls come together really quickly, and cook in a matter of minutes. I have been brainstorming lately on more ways to cook ground beef in my Instant Pot, and these turned out great!
How to make Instant Pot Meatloaf Balls
- Start by mixing all of the meatloaf ingredients. Ground beef, oatmeal, celery, onion, ketchup, etc. Set aside.
- Then whisk your glaze together in your Instant Pot Pot.
- Roll your meatballs and place them in your Instant Pot
- Place the Instant Pot lid on your Instant Pot and seal it.
- Set your Instant Pot to cook on manual for 8 minutes. Let your Instant Pot naturally release.
- Open your Instant Pot and remove the meatballs. Place them in a bowl.
- Add some corn starch to the remaining glaze, and saute until the glaze thickens.
- Drizzle glaze over meatloaf balls and serve.
These meatloaf balls were so good. This batch lasted my family through 1 dinner, plus we all ate leftovers for lunch. My kindergartener, who is my pickiest eater, INHALED them! I know that these meatloaf balls aren’t the prettiest looking food, but I promise you that they are fantastic!
Instant Pot Meatloaf Balls
Ingredients
Meatloaf Balls
- 1.5 pounds ground beef
- 1 cup oatmeal
- 2 eggs
- 1/2 cup milk
- 1/2 small onion chopped
- 2 celery stalks chopped
- 2 cloves garlic minced
- 3/4 cup parmesan cheese
- 3 tablespoons ketchup
Meatloaf Glaze
- 3/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon yellow mustard
- 3-4 tablespoons worcestershire sauce
- 1 cup water
- 1 teaspoon cornstarch
