Cuban Style Citrusy Garlic Chicken Rice Bowls

I picked up Trader Joe’s new Cuban Style Citrusy Garlic Seasoning, and I absolutely loved it!   After using it on my burrito bows multiple times, I decided to use it as the main seasoning in this dish.   I made this super flavorful chicken in my Instant Pot, but you can cook this chicken any way you prefer.   These Cuban-style Chicken bowls were a nice switch from the classic chicken taco burrito bowls we often eat for supper. 

If you frequently read this website, you know that I LOVE using Trader Joe spices in my cooking.   It is a great way for those who live in the midwest to be a bit more adventurous with our cooking.   So far,

I picked up this Cuban-inspired Citrusy Garlic seasoning at Trader Joe’s and started using it when we made tacos or burrito bowls.  I finally decided to use it as the main spice on chicken.  This chicken turned out super flavorful!

I do not actually live near a Trader Joe’s.   My in-laws and parents both live near Trader Joe’s, so I like to stock up when I’m visiting.  You can also find Trader Joe’s spice on amazon or eBay for a slightly marked-up price. 

This recipe is super easy to make.   All you need is 

Boneless Chicken Tenders

1 Onion

Trader Joe’s Citrusy Garlic Seasoning

1 cup of water

Items to build your rice bowls 

cooked rice

belle pepper

black beans

avocado

Lime wedges

additional toppings of your choosing.

This chicken turned out super flavorful.  I used three tablespoons of this seasoning in this recipe.   However, if you’re making this recipe for kids, I recommend using it a bit less.  Probably 2 tablespoons.

I cooked the chicken and the rice separately in my Instant Pot.  You CAN cook them at the same time using the PIP method.  However, I personally prefer to cook rice by itself when I am pressure cooking.  

This is a super easy recipe that works well for meal prep or for a quick weeknight dinner.  I like making these rice bowls for my kids because everyone can choose their own toppings.

If you’re maing these bowls for meal prep lunches or dinners.  you can make the chicken and the rice in advance and just add the toppings when it’s time to eat.   If you’re making this for dinner.  I would make the chicken in advance, then just make the rice when you’re ready to eat.

I like to make rice in my Instant Pot, it only takes 12 minnutes.

Ingredients

  • 1.5 pounds boneless chicken tenders
  • 1 cup water
  • 1/2 cup onion
  • 3 tablespoons Trader Joes Cuban-Inspired citrusy garlic seasoning

Build your bowls

  • 4 cups cooked rice
  • 1 can black beans drained
  • 1-2 bell peppers sliced
  • Avocado

Instructions

  1. In your pressure cooker, add onion, water, chicken and seasoning.

  2. Close pressure cooker lid. Seal valve and cook on high pressure for 15 minutes.

  3. Release pressure

  4. Remove chicken from the Instant Pot. add it to a bowl. add the onions to the chicken and about 1/2 of the cooking juice to the chicken to keep it. moist.

Build your Rice Bowls

  1. Add rice, chicken , beans, bell pepper, and avocado to your bow.

  2. Add other toppings you like, guacamole, cheese, salsa etc.

These bowls are super easy to whip up and a great way to introduce your family to some different flavors!
