Everything Bagel Cream Cheese Chicken Thighs

My entire family enjoys these everything bagel cream cheese chicken thighs.   Chicken thighs, in my opinion, are the best part of the chicken to cook!  This budget-friendly meal only calls for a few ingredients and takes about 20 minutes to cook from start to finish.  I cooked these chicken thighs in my Instant Pot, but you can easily bake these thighs in the oven in a baking dish or cook these in a pan or skillet on the stove.   Adding cream cheese sauce to chicken thighs makes them taste out of this world, and adding our favorite Everything but the bagel seasoning is the perfect finishing touch!  You will love the flavor of this everything bagel chicken! 

When I was in my twenties, I was a boneless skinless chicken snob.   Nowadays, I buy more whole chickens and chicken thighs because they are more budget-friendly and because my kids really enjoy super tender chicken.   I love cooking chicken thighs in my Instant Pot because I can brown them before, hand, and they cook up perfectly in just 8 minutes.

Everything but the bagel seasoning has become one of my favorite seasonings!  You can buy it at Trader Joe’s and Aldi.  Or you can buy it online.

Everything bagel cream cheese chicken is easy to make.

Ingredients 

1 tablespoon of olive oil

1/4 chopped onion

6 boneless chicken thighs.  You can also use chicken breast

salt and black pepper

4 ounces of cream cheese

Everything bagel seasoning

scallions and tomatoes- I added these because these are vegetables I typically enjoy when I eat an actual everything bagel 

Everything but the bagel seasoning is keto and whole 30 friendly and vegan.  It really is a tasty seasoning to have around.  I love adding it to hard-boiled eggs and avocado toast, and I also love using it for seasoning roasted vegetables. Everything but the bagel is one of my favorite spices!

Optional ingredient: If you’re not counting net carbs you could add some panko breadcrumbs to these to make them extra crispy!

What Makes up Everything But the Bagel Seasoning?

poppy seeds

sesame seeds

black sesame seeds

garlic or garlic powder

onion flakes

sea salt

Cooking Chicken thighs in an Instant Pot is super easy.  All you need to do is:

  1. Set your Instant Pot to the saute setting
  2. Pat the chicken thighs down with paper towels and season them with salt and pepper.
  3. put olive oil and onions, and chicken thighs into the pot.  Saute onions and brown the chicken thighs.  Don’t worry about cooking them all the way through.
  4. Pour a cup of water into the instant pot.
  5. Pressure cook for 8 minutes.  Use the quick pressure release.
  6. Using a meat thermometer, make sure the chicken has reached an internal temperature of 165 degrees f
  7. Remove the chicken thighs from the pot.
  8. Add cream cheese to the juices left in the Instant Pot. Saute them together to make the cream cheese sauce.
  9. Drizzle the cream cheese sauce mixture over the chicken thighs
  10. Shake a generous amount of everything but the bagel seasoning over the chicken.
  11. Serve with a side dish of veggies!

Everything Bagel Cream Cheese Chicken Thighs

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 6 boneless chicken thighs
  • 1 cup water
  • 4 ounces cream cheese
  • 2 tablespoons Everything but the bagel seasoning

garnish

  • tomato slices
  • scallions

Instructions

  1. Ser your Instant Pot to the saute setting.

  2. Add olive oil, onions, and chicken thighs to the inner pot.

  3. Saute onions until transparent. Sear chicken thighs until they are browned on the outside, about 4-5 minutes.

  4. Add water to the inner pot

  5. Close and secure lid. Switch the vent to "sealing". Pressure cook on high pressure for 8 minutes.

  6. Quick release pressure.

  7. Remove chicken thighs and place them in a serving dish.

  8. Add Cream cheese to the inner pot of the instant pot and hit the saute button Create a sauce using the juices in the instant pot and the cream cheese.

  9. Drizzle the cream cheese sauce over the chicken

  10. Sprinkle Everything but the bagel seasoning onto the chicken. Garnish and serve.

So delicious! Loved that the chicken stayed juicy. The sauce is so tasty. Served the dish with a green salad and creamer potatoes. Will definitely put this in my rotation.

Can I use boneless chicken breast instead?
What do you think the cooking time would be .

That would depend on the size of the chicken. Smaller pieces of chicken would be 8 minutes. larger chicken breasts might need a few extra minutes. Maybe 12 minutes.
