Feta Tomato Cauliflower Gnocchi

If you’re on TikTok, then you might have seen videos for Trader Joe’s feta tomato pasta.  I had to jump on this because I always looked for an excuse to put feta cheese on my food.  I used this awesome trend to make my own low-carb version of Tomato Feta Cauliflower Gnocchi.   This was a super easy, tangy dish that my family really loved!   I cooked my cauliflower gnocchi in my slow cooker, but if you want your cauliflower gnocchi to end up crispy, you can also cook this meal on a sheet pan. 

I’m 38 years old.  I just joined TikTok, and let’s face it.  I’m very generous when I even call myself a millennial.  Although I have not told my kids that I joined TikTok, I have enjoyed many recipe videos.  One Trend that I have really enjoyed was Trader Joe’s Feta Tomato Pasta.

I decided that not only did I want to make a low-carb version of this dish, but I wanted to use my slow cooker.  I have been using my slow cooker more often recently.

How Do I Cook Tomato-Feta Cauliflower Gnocchi?

I added all of my ingredients into my slow cooker, and dinner cooked itself.   When you cook cauliflower gnocchi in a slow cooker, it turns out like a dumpling.   *If you want your cauliflower gnocchi to turn out crispy.  I recommend cooking this dish on a sheet pan in the oven.  

What else can I add to my Cauliflower Gnocchi?

Rotisserie chicken

Spinach

Mushrooms

Shrimp

would all taste great added to this meal.

What kind of Feta Cheese can you use to make this meal?

This meal originally gained popularity when the ook used a  block of feta cheese was used from Trader Joe’s.  As someone who doesn’t live near a Trader Joe’s, I used crumbled feta cheese, and it still worked out great.

This is such an easy meal because you don’t even need to thaw the cauliflower gnocchi. You just put it into the slow cooker, frozen.  If you choose to make this in the oven, you still don’t need to thaw the cauliflower gnocchi.

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • 2 10 ounce packages of frozen cauliflower gnocchi
  • 2 pints grape tomatoes
  • 6 ounces feta cheese

Instructions

Slow Cooker Instructions

  1. Drizzle olive oil into the bottom of the slow cooker.

  2. Add cauliflower gnocchi, garlic, Italian seasoning, tomatoes, and feta cheese. Stir and set your slow cooker to low.

  3. Cook on low for 3-4 hours. Mix everything once the cheese has softened and the tomatoes are blistered.

Oven Instructions.

  1. On a sheet pan, place cauliflower gnocchi, garlic, Italian seasoning, tomatoes, and feta cheese and mix.

  2. Roast in the oven for 400 degrees for 25 minutes. Remove from oven and mix the melted feta cheese and the blistered tomatoes with the cauliflower gnocchi. Serve.
