This is a great way to use those leftover peanut butter cups from Halloween, Christmas, or other holiday celebrations. These will remind you of moose tracks ice cream, only in rice krispie form!
Where did the term Moose Tracks come from?
Moose Tracks is an ice cream flavor. The Original Moose Tracks product description is as follows, “vanilla ice cream with peanut butter cups and famous Moose Tracks fudge.” These cookie bars are reminiscent of most tracks ice cream, as they bake up with peanut butter cups and are laced with hot fudge. When you eat these Moose Tracks cookie bars, you will be reminded of your favorite pint of ice cream!
Ingredients
6 cups Rice Krispies cereal- –any generic brand of Crispy rice cereal will work.
10 ounces cups mini marshmallows
Four tablespoons unsalted butter
1/2 cup creamy peanut butter
3/4 cup mini peanut butter cups, chopped- I recommend using the peanut butter cups found at ALDI or Trader Joe’s
1/4 cup hot fudge sauce
Optional Ingredients: Chocolate or white chocolate chips would be delicious additions to this recipe!
Instructions:
1. Grease an 8×8-inch baking pan using cooking spray—warm up hot fudge by microwaving it for 30 seconds according to the directions on the jar.
2. In a large pot on the stove, melt butter over low or medium heat. Add the mini marshmallows to the saucepan and stir until completely melted and well combined with the butter and peanut butter. Remove from heat. You can also choose to melt the butter, peanut butter, and marshmallows in the microwave in a microwave-safe bowl.
3. Add the Rice Krispies cereal to the melted marshmallow mixture. Stir until the cereal is evenly coated.
4. Fold in Peanut Butter Cups. Once the cereal is coated, gently fold in the chopped mini peanut butter cups throughout the mixture.
5. Swirl in Hot Fudge: Drizzle the hot fudge sauce in the rice krispie mixture without mixing too much.
6. Transfer the mixture to the prepared pan. Using a greased spatula or your hands. Press the mixture firmly and evenly into the pan.
7. Place the pan in the refrigerator for about 30 minutes or until the Moose Tracks Rice Krispie Treats are set.
8. Once set, use a sharp knife to cut the treats into squares.
