Olive Oil Chocolate Chip Muffins

These olive oil chocolate chip muffins are super moist and rich in complex flavor. These muffins make a delicious breakfast, dessert, or snack!

If you want to make muffins but don’t have any butter in your fridge, no problem! These cookies are made with olive oil and have a fantastic taste! Olive oil chocolate chip muffins can have a distinct and delightful flavor profile. Olive oil contributes to a moist and tender texture, making the muffins soft and rich. The oil can enhance the overall mouthfeel of the muffins, creating a more decadent experience.

Ingredients 

2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Two large eggs

1 cup extra virgin olive oil

1 cup milk (you can use any milk substitute like almond milk or soy milk)

One teaspoon of vanilla extract

1 cup chocolate chips

Optional Ingredients:  You can add lemon or orange zest for some brightness. You can also replace the chocolate chips with chocolate chunks, dark chocolate chips, or another kind. You can also add cocoa powder for extra chocolate flavor.

Muffin pan

Cooking Spray or Muffin liners 

Medium bowl

Instructions:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
  • Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • In another bowl, beat the eggs. Add the olive oil, milk, and vanilla extract and mix until well combined.
  • Pour the wet ingredients into the flour mixture and stir until just combined. Do not overmix.
  • Gently fold in the chocolate chips.

  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.

  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.

  3. Add eggs. Add the olive oil, milk, and vanilla and mix until well combined.

  4. Gently fold in the chocolate chips.

  5. Spoon batter into muffin cups. Bake for 18-20 minutes or until a toothpick comes out clean.

  6. Let cool before removing muffins from the muffin tin. Serve.

Storage: You can store in an airtight container at room temperature for up to 5 days. You can also store it in the fridge for the freezer.
