Olive Oil Chocolate Chip Cookies

These olive oil chocolate chip cookies are made with extra-virgin olive oil instead of butter, and you will love the flavor and the chewy and crispy texture of these amazing cookies!

If you want to make cookies but don’t have any butter in your fridge, no problem! these cookies are made with extra virgin olive oil and have an amazing taste!  You will need to make these for your next dessert table!  These cookies are chewy on the inside and crispy on the outside!

Why use olive oil in cookies?

  1. Olive oil is considered a healthier fat compared to some other options. It contains monounsaturated fats, which are associated with heart health. Using olive oil in cookies can be a good choice for those looking to reduce saturated fat content.
  2. Olive oil is a great substitute for butter for people who follow a dairy-free diet

Ingredients:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup olive oil

1/2 cup granulated sugar

1/2 cup packed dark brown sugar or regular brown sugar

One large egg

One teaspoon of vanilla extract

1 cup dark chocolate chips

1/4 cup of pine nuts – Optional

Optional Ingredients:  You can add walnuts, pistachios, almonds, or another kind of nut.  You can add caramel, chocolate chunks, flaky sea salt, or kosher salt to these cookies.

Recipe Note: Make sure you use high quality olive oil in this recipe.  You may want to consider tasting the olive oil before using it in this recipe.

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or cooking spray.
  2. Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
  3. Whisk together the olive oil, granulated sugar, and brown sugar, vanilla, and egg in a large bowl until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold in the chocolate chips until evenly distributed in the cookie dough.

6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.

8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Storage:

 

You will want to store these in an airtight container at room temperature on the kitchen counter for up to five days.  You can also store them in the freezer for up to three months.
