Brownie Mix Cookies

No need to spend time fussing in the kitchen. All you need to make this chewy, fudgy brownie mix cookie recipe is a box of store-bought brownie mix!

Making cookies with brownie mix is easy, but these cookies are mouthwateringly delicious, and you will love the chewiness of the fudgy center!     I highly recommend storing these cookies in the fridge. They taste fantastic when slightly chilled. This will become one of your new favorite cookie recipes!

You will love these Brownie Mix Cookies!  Who knew you could make these easy cookies using a brownie box mix!  You will love the chocolate flavor in these cookies; you can make so many variations!  No need to break out your brownie pan!  This recipe takes much less time than baking regular brownies!

Ingredients needed:

1 18 ounces package of your favorite store-bought brownie mix

Two eggs

1/2 cup flour

1/4 cup of canola or vegetable oil

1-2 tablespoons pure vanilla extract

Optional add-ins:

You can add peanut butter chips, white chocolate chips, butterscotch chips, nuts, caramel, chocolate chunks, espresso powder, pecans, or any other ingredients to your brownie batter!

These Brownie Cookies:

  • It tastes chewy and soft, exactly like the consistency of a brownie, but in cookie form!
  • It is the perfect easy chocolatey dessert to make for your next get-together!  All the chocolate lovers in your life will appreciate them!
  • You can add your favorite flavors to these cookies!  Chocolate chips, caramel candies, cookie dough,  or sprinkles.
  • Crinkly Tops: Some brownie mix cookie recipes result in cookies with crinkly, shiny tops, similar to the characteristic top of a well-made brownie.

Instructions

  1. Preheat oven to 350 degrees f
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a large mixing bowl, mix brownie mix, oil, flour, vanilla, and salt. You can use a hand mixer or a stand mixer if you like.

  1. Use a cookie scoop to portion out the dough and place the dough evenly on your cookie sheet.
  2. Cook in the oven for 10 minutes. Let the cookies cool completely before moving them to a cooling rack.

Turtle Tracks Brownie Mix Cookies

Making cookies with brownie mix is easy, but these cookies are mouthwateringly delicious!   These cookies are drizzled with caramel sauce and topped with toasted pecans so that you will feel like you are enjoying turtle tracks ice cream but in cookie form!   I highly recommend that you store these cookies in the fridge. They taste fantastic when they are slightly chilled.

Ingredients

  • 1 18 ounce brownie mix
  • 1/4 cup all purpose flour
  • 1/2 cup canola oil
  • 1 eggs
  • 1 teaspoon sea salt
  • 2-3 tablespoons caramel sauce
  • 1/3 cup toasted walnuts

Instructions

  1. Preheat oven to 350 degrees f

  2. Line a baking sheet with parchment paper or a silicone baking mat.

  3. In a large mixing bowl, mix brownie mix, oil, flour, vanilla, and salt.

  4. Use a cookie scoop to portion out the dough and place the dough evenly on your cookie sheet.

  5. Cook in the oven for 10. minutes.  Make sure you let the cookies cool completely before moving the cookies to a cooling rack.  

Storage

You can store these brownie cookies in an airtight container or a plastic bag in the fridge for up to a week.  You can also freeze these in the freezer, but I recommend thawing them at room temperature for at least an hour before eating them.

* I highly recommend using Ghirardelli brownie mix for this recipe. To make this recipe gluten-free, you can use Aldi grocery stores’ gluten-free baking mix. You will want to add gluten-free flour to the cookies if you want them to remain gluten-free
