Sesame Peanut Cold Noodle Salad

This Cold Sesame Peanut Noodle salad is an easy make-ahead recipe to enjoy when the weather is too hot to heat up your kitchen! Total Time: 30 minutes 

You will love the sweet peanut flavor in these sesame peanut noodles! You only need simple pantry staples and fridge ingredients to make this delicious noodle salad! If you don’t have the exact vegetables listed in the recipe, add whatever fresh vegetables you have in your fridge.   This recipe is excellent for a quick summer meal, meal prep, lunches, potlucks, and summer picnics. This cold sesame peanut noodle salad can easily be transported in the cooler to the beach!

Ingredients needed1 pound spaghetti noodles

1 Pound of cooked spaghetti noodles

Three small English cucumbers, peeled, seeded, and thinly sliced

One carrot, peeled and grated

1/2 cup thinly sliced green onion

½ cup of thawed frozen edamame

1 cup of cabbage or cole slaw mix

1/4 cup chopped peanuts

Two tablespoons sesame seeds

Sesame peanut sauce

1/4 cup rice wine vinegar

One teaspoon of minced garlic

Two tablespoons of peanut butter

Three tablespoons of soy sauce- you can choose to use low-sodium soy sauce or regular

Two tablespoons of honey or brown sugar

Two tablespoons of sesame oil

One teaspoon of grated ginger or ground ginger

1/2 cup of water

Optional Ingredients – Cilantro, sriracha, and lime juice would taste great with this flavor profile. Add veggies like pepper, red cabbage, or red onions.   You can also choose to use different noodle-like rice noodles or udon noodles if you are gluten-free.

Instructions:

  1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water until they are cool to the touch.
  2. Combine the noodles, cucumber, carrot, green onion, edamame,  cole slaw mix, and peanuts in a large bowl.
  3. Whisk together the dressing ingredients in a small saucepan over medium heat.
  4. Pour the dressing over the noodle mixture and toss to coat.
  5. Cover and refrigerate for at least 30 minutes or up to overnight.
  6. Serve chilled.

  • 1 tbsp sesame seeds

Sesame Peanut Sauce

  • 1/2 cup rice wine vinegar
  • 1 teaspoon minced garlic
  • 2 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons  sesame oil
  • 1 teaspoon grated ginger or ground ginger
  • 1/2 cup water

Instructions

  1. Cook the noodles according to the package instructions.

  2. Combine the noodles, cucumber, carrot, green onion, edamame, cole slaw mix,  and peanuts in a large bowl.

  3. In a small sauce pan over medium heat, whisk together the dressing ingredients, until combined to make a smooth sauce.

  4. Pour the dressing over the noodle mixture and toss to coat.

  5. Cover and refrigerate for at least 30 minutes or up to overnight.

  6. Serve chilled.
