Cold Sesame Peanut Noodle Salad

This Cold Sesame Peanut Noodle salad is an easy make-ahead recipe to enjoy when the weather is too hot to heat up your kitchen! 

Ingredients

  • 1 pound spaghetti noodles
  • 3 Three small English cucumbers thinly sliced
  • 1 carrot  peeled and grated
  • 1/4 cup green onion sliced
  • 1/2 cup thawed frozen edamame
  • 1 cup cabbage or cole slaw mix
  • 1/4 cup chopped peanuts
  • 1 tbsp sesame seeds

Sesame Peanut Sauce

  • 1/2 cup rice wine vinegar
  • 1 teaspoon minced garlic
  • 2 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons  sesame oil
  • 1 teaspoon grated ginger or ground ginger
  • 1/2 cup water

Instructions

  1. Cook the noodles according to the package instructions.

  2. Combine the noodles, cucumber, carrot, green onion, edamame, cole slaw mix,  and peanuts in a large bowl.

  3. In a small sauce pan over medium heat, whisk together the dressing ingredients, until combined to make a smooth sauce.

  4. Pour the dressing over the noodle mixture and toss to coat.

  5. Cover and refrigerate for at least 30 minutes or up to overnight.

  6. Serve chilled.
