Sour Cream and Onion Deviled Eggs

Sour Cream and Onion Devilled eggs are super flavorful and delicious ways to switch up a traditional deviled egg.  Your family and friends will go nuts over this deviled egg recipe.

Devilled eggs are traditionally a side dish served at brunch, dinner parties, holidays, church socials, and potlucks.  In the American South, they are often served as a main dish.  Devilled eggs travel well and are always a crowd-pleaser!

Traditionally, deviled eggs are made with mayonnaise, mustard, salt, pepper, and possibly pickle relish.   You will love this recipe’s classic sour cream and onion egg filling switch-up!

History of devilled eggs

deviled eggs date back to the ancient Romans, who served something similar to deviled eggs at parties. The term “deviled” eggs originated in the 1800th century because they were made with spicy ingredients such as spicy mustard and hot paprika.  Deviled eggs gained popularity in the 19th century in the United States, becoming a popular food for parties.

How to make the best hard-boiled eggs

There is one simple thing you have to follow for tasty deviled eggs.   You need to follow the correct directions for boiled eggs.  I have done this wrong too often and ended up with underdone or overdone eggs.   Here is the simple formula for hard-boiled eggs.

  1. Bring water to a boil.
  2. Add eggs
  3. and boil for 10-11 minutes
  4. rinse with cold water after you remove them from the boiling water.  ( This makes them easy to peel)

You can also make delicious hard-boiled eggs in your Instant Pot or pressure cooker

Ingredients Needed

12 large eggs

1/4 cup of sour cream

Two green onions, finely chopped

Two teaspoons of onion powder

1/2 teaspoon of garlic powder

1/2 teaspoon of kosher salt

Optional: chopped fresh chives for a garnish. Black pepper, caramelized onions, or sauteed shallots.

Instructions

1. Hard boil your eggs.  Bring water to a rolling boil and cook eggs for 10-11 minutes.

2. Remove from water and rinse the eggs with cold water.

3. Peel eggs.  Cut each egg in half and remove the egg yolks.

4.  Place the yolks in a bowl.  Mix the yolks with sour cream, chopped green onions, onion powder, and sea salt.  You can choose to use a food processor for this step.

5. Place the egg yolk mixture back in the white halves. I was using a spoon or a cookie scoop.

You will love the creaminess of the sour cream in place of mayo and the taste of the onion flavor in these eggs.

Storage:

You can store the leftover eggs in airtight containers in the fridge for up to 5 days.  I would not recommend storing these in the freezer.

The eggs can also be cooked in an Instant Pot…5 min on high. Then plunge into ice water x 5 min. Peel immediatley. Easy Peasy!

Want to know a nifty trick to alwaYs have easy peel eggs—even if they are Fresh from the hen’s bottom? Instead of boiling, steam them for 20 minutes, theN plunge in cold water. Peels great every time!
