Triple Apple Oatmeal Muffins

Usually, you don’t see many baking recipes on this site.  I don’t bake much in my typical day to day life.   However, these times are extraordinary times.  I have been baking—a lot. And I have been having fun experimenting with many baking recipes.  These Triple Apple Muffins have, you guessed it, THREE different places where I put apples into them.

  1. These apple muffins are infused with applesauce.
  2. These apple muffins have apple chunks in them.
  3. These apple muffins have stovetop cooked cinnamon apples stirred in as well!

In addition to all these fantastic apple flavors, the oatmeal I added in these makes them nutty.   These muffins are the bomb!

Just because we’re living history right now in these times of quarantine, I wanted to show you my camera-shy recipe tester, who is in great need of a haircut! ( but looks adorable without the said hair cut all the same)

I happen to have a lot of apples around the house because I am trying to grocery shop just about every two weeks I have been buying a lot of apples.  Apples last a long time.

Here is what you need for these AMAZING Triple Apple Muffins 

Six apples

1/3 cup of applesauce

1/2 teaspoon cinnamon

lemon juice 

pure vanilla extract

1/3 cup of milk

One egg

All-purpose flour

3/4 cup oatmeal 

1/2 cup sugar

1 1/2 teaspoons of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon salt

Plus, a little more oatmeal and sugar for the topping. 

These apple muffins are so fluffy, and the refreshing taste of apple is apparent throughout every bite!  I think the two ingredients that make these muffins incredible are the applesauce and the butter.  After years of putting coconut oil in my baked goods, I am back to using butter exclusively.

Triple Apple Oatmeal Muffins

Servings 12 Muffins

Ingredients

  • 6 apples peeled and chopped
  • 1/3 cup applesauce
  • 1/2 cup butter melted
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 1 tablespoon water
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups all purpose flour
  • 3/4 cup oatmeal
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

topping

  • 2 tablespoons oatmeal
  • 2 tablespoons sugar

Instructions

  1. Preheat oven to 400 degrees

  2. Peel and cut apples into chunks. Set three apples aside.

  3. Cook three apples in a medium saucepan with lemon juice and cinnamon. Cook until the apples are tender and caramelized.

  4. Mix dry ingredients together. Flour, oatmeal, sugar, baking powder, baking soda and salt.

  5. Add wet ingredients. Butter, apples, vanilla, applesauce, egg and milk.

  6. Add batter generously to each muffin tin.

  7. Add a scoop of cinnamon apples on top of each muffin and stir them in.

  8. Top each muffin with additional oatmeal and sugar.

  9. Cook for 20 minutes at 400 degrees

  10. Remove muffins out of the oven. Let cook for a few minutes. These muffins are best when enjoyed when they are still warm.
