Moose Tracks Ice Cream is my favorite Ice Cream Flavor! I have always been a lover of decadent ice cream. Now, you can enjoy your favorite ice cream baked into a traditional chocolate chip cookie!
Where did the term Moose Tracks come from?
Moose Tracks is a flavor of ice cream. The original Moose Tracks product description follows: “vanilla ice cream with peanut butter cups and famous Moose Tracks fudge.” These cookie bars are reminiscent of most tracks ice cream, as they bake with peanut butter cups and are laced with hot fudge. When you eat these Moose Tracks cookie bars, you will be reminded of your favorite pint of ice cream!
Ingredients
2 cups of all-purpose flour
One teaspoon of baking powder
One teaspoon of baking soda
1/2 teaspoon salt
1 cup of packed brown sugar
One cup of softened butter at room temperature. or 16 tablespoons of butter
One egg
One teaspoon of vanilla extract
1/2 cup of chopped-up peanut butter cups
1/2 cup of hot fudge, warmed up. You can find the hot fudge in the ice cream aisle of your grocery store.
Optional Ingredients: chocolate chips, white chocolate chips.
Equipment
Mixer- an electric hand mixer or a stand mixer.
Cookie Sheet or baking sheet lined with parchment paper or wax paper.
These Moose Tracks cookies are the perfect treat to enjoy with a glass of milk! You will love how fudge is ribboned throughout the cookie and packed with peanut butter cups!
I love the salty flavor of moose tracks fudge. This recipe recommends salted butter, but unsalted will also work.
Instructions
1. Preheat oven to 350 degrees
2. Mix flour, baking soda, powder, and salt in a bowl. Set aside.
3. Cream butter, brown sugar, egg, and vanilla extract in a second bowl.
4. Add the flour mixture to the butter and stir until a batter is formed.
5. gently fold in the peanut butter cups and the hot fudge. Don’t overmix after the hot fudge has been added to the cookie batter. You want the fudge to look like it is ribboned in the cookies.
6. Using a cookie scoop, drop the cookie dough onto your baking sheet lined with parchment paper. Make sure that the cookies are 1 inch apart.
7. Bake for 12 min. Remove from the oven, and wait until the cookie has cooked slightly before transferring it to a cooling rack.
Tips for making the best cookies possible
- Measure the flour correctly. Adding the wrong flour is the most common reason cookie recipes fail. Make sure you gently add your flour to a measuring cup and level it off with a sharp edge. You do NOT want to pack the flour in your measuring cup.
- Although many cookie recipes call for unsalted butter, I suggest using salted butter in this recipe. Extra saltiness tastes excellent with the peanut butter cups and the swirls of famous moose tracks fudge.
- Don’t skip on the salt- Salt tastes fantastic with chocolate, make sure you remember to add it.
- Don’t overbake- Your cookies will seem soft when you remove them from the oven. Trust me. They are done baking. Let them cool before transferring them to a cooling rack.
