Every year during the holidays, I stock up on several Jiffy mix flavors to easily make bread and muffins for various meals. This year, I had several extra Jiffy Yellow Cake Mixes and decided to try making these cookies! This peanut butter cookie recipe was so easy and delicious that I. might now always use Jiffy Mix when making them! Jiffy Cake Mix is smaller than most cake mixes so it will make the perfect amount of cookies!
What is Jiffy Mix?
Jiffy is a brand of baking mixes that originated in Michigan in the 1930s. Jiffy Mixes are smaller than regular cake mixes, usually about 1/2 the size. Jiffy Mix Yellow Cake Mix is available at Walmart and all major grocery stores.
This 1/2-size baking mix works out well for this cookie recipe! You get about 15 cookies with this recipe, but you can easily double the recipe for more cookies!
Ingredients
One 9-ounce box of Jiffy Yellow Cake Mix
1/2 cup of peanut butter – I recommend creamy peanut butter. Avoid stirring natural peanut butter
1/2 cup of softened unsalted butter
One egg
One teaspoon of vanilla extract
Additional Add-Ins- chocolate chips, cocoa powder, sea salt, or anything else you like with your peanut butter cookies.
Equipment
Large bowl, cookie sheet, cookie scoop, wire rack or cooling rack, wooden spoon, parchment paper electric mixer, hand mixer, and a fork for making the criss-cross pattern.
Instructions
- Preheat oven to 350 degrees. Grease or line a baking sheet with parchment paper.
- Combine cake mix, butter, peanut butter, egg, and vanilla in a large mixing bowl. Mix until a cookie dough is formed.
- Use a cookie scoop to drop cookie dough onto the baking sheet, one inch apart
- Press each cookie with a fork in a criss-cross pattern.
- Bake for 10-12 minutes. Remove from oven.
- Let cookies cool for 5-10 minutes before moving them to a cooling rack
- Serve.

Storage
Store leftovers in an airtight container at room temperature for up to five days. You can also store the airtight container in the freezer for up to 3 months.
