Slow Cooker Buttery Ranch Carrots

Easy to prepare side dish

These slow cooker sweet and zesty ranch carrots are dripping with butter and filled with ranch flavoring.  This is the easiest side dish you can easily bring to any holiday celebration with almost no prep time, and your kids will gobble up this vegetable recipe.  

If you want an easy side dish that travels well for the holidays, look no further than these easy crock pot butter ranch carrots.  All you need to do is place all the ingredients into a slow cooker and return a few hours later to tender carrots dripping with zippy buttery flavor!

My family likes to hold somewhat of a “potluck” when we have a holiday meal.  This way, whoever is hosting won’t be overwhelmed by making a huge holiday meal.   These ranch carrots are a great recipe to make for the holidays.  This travels well, needs only a few ingredients, and is a veggie side dish that almost any kid will eat!

Ingredients

2 lbs of baby carrots: You can also use more giant carrots that you have peeled and cut into chunks.   You can choose to use rainbow carrots in this recipe.    

Five tablespoons of butter

A Ranch Seasoning Packet OR you can make your own Ranch Seasoning.  I also like this Ranch seasoning from Trader Joe’s. 

Ranch Seasoning Ingredients 

2 tsp of dried onion– you can also use onion powder 

2 tsp garlic powder

Two teaspoons of dried parsley

Two teaspoons of dried dill

One teaspoon of salt

One dash of pepper

You can also use two packets of store-bought ranch dressing mix

Optional Ingredients:

If you want to add even more flavor, try adding garlic or more onion. You can also add some spice to the carrots.  If you want to add more than just carrots,  potatoes or red potatoes would taste great cooked with the carrots in the crock pot.

Instructions

1. Set your slow cooker to low and add carrots and ranch seasonings to the slow cooker.

2. Stir the ranch seasoning throughout the carrots.

3. slice the butter into even slices and spread over the carrots.

4. Slow-cook carrots on low for 4-6 hours or high for 2-3 hours.  When carrots are fork-tender,  they are ready to eat.

Can you make this recipe in the oven or on the stovetop?

It would take a long time to cook all these carrots on the stove, but this recipe would work better baked in a casserole dish in the oven if you don’t want to cook them in the slow cooker.

Storage

You will want to store leftovers in an airtight container in the fridge.  The butter will harden when you store the carrots in the fridge,  but that is okay! You can reheat the carrots, and the butter will melt again.

Carrots are sweeter than most vegetables,  so my kids love them!  They are low in calories and high in vitamin A, C, fiber, potassium, and protein. They are low in saturated fat, trans fat, cholesterol, sodium, and carbohydrates.
