Strawberry Blueberry Broccoli Salad

This Red, White, and Blue Broccoli salad are perfect for the summer holidays and a sweet and delicious way to serve vegetables to your family!

If you are a frequent reader of this site, you know how much my family loves broccoli salad.   I learned several years ago that my kids, who don’t love lettuce salads, will always eat broccoli salad, especially when I top it off with fruit and other things they like.

Creating a “patriotic” red, white and blue broccoli salad for summer would be fun. This perfect salad features strawberries, blueberries, goat cheese crumbles, toasted almonds, and coconut. You can add or remove ingredients to this salad to fit your tastes.   The sweet taste of the berries tastes fantastic, with the savory flavors in the broccoli combination.   This is the perfect side dish for any backyard bbq or picnic potluck this summer!

Ingredients

8 cups of fresh broccoli florets

1 cup of fresh strawberries

1 cup of fresh blueberries

1/3 cup of crumbled goat cheese- not feta cheese 

1/3 cup of toasted almonds

1/3 cup of toasted coconut chips

1/3 cup of chopped red onion

1 cup creamy dressing with poppy seeds

Sweet Poppyseed dressing

1 cup of mayonnaise. You can substitute 1/2 the mayo with greek yogurt to cut calories.

1/4 cup of vinegar

1/4 cup of brown sugar. You can also substitute honey or maple syrup.

One teaspoon of dijon mustard

Four teaspoons of poppy seeds

dash of salt and pepper

Optional ingredient add-insoranges, raspberries, dried cranberries, raisins, pecans, walnuts, other nuts, cheddar cheese, avocado, bacon bits, apples, spinach,  or green onions

You will love the flavor, texture, and crunch of this salad! You can easily make this and store the salad in the fridge for a few days before your party. I recommend making this during the strawberry season, just in time for the 4th of July!

Store leftovers in the fridge in an airtight container for up to five days.  

Instructions

1. Prepare the dressing by adding the ingredients into a small bowl and mixing with a whisk.

2. Wash broccoli and cut it into florets.

3. Wash Blueberries and Strawberries. Toast Almonds

4. Add broccoli to a large bowl and add the salad toppings.

5. Pour salad dressing on top and toss by stirring the mixture.

6. Add additional toppings and serve.

Blueberry Strawberry Broccoli Salad

Ingredients

  • 8 cups chopped fresh brococli florets
  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1/3 cup crumbled goat cheese
  • 1/3 cup toasted almonds
  • 1/3 cup toasted coconut
  • 1/4 cup chopped red onion
  • 1 cup creamy poppyseed dressing

Creamy Poppyseed Dressing

  • 1 cup mayonnaise
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon dijon mustard
  • 4 teaspoons poppyseeds
  • dash salt and pepper

Instructions

  1. Prepare the dressing by adding the ingredients into a small bowl and mixing with a whisk.

  2. Wash broccoli and cut it into florets.

  3. Wash Blueberries and Strawberries.  Toast Almonds

  4. Add broccoli to a large bowl and add the salad toppings.

  5. Pour salad dressing on top and toss by giving the mixture a few stirs.

  6. Add additional toppings and serve.
