When I was a kid, my mom always made Corn Flake Chicken. It was my favorite. She would dip the chicken in mayonnaise, then coat the chicken with corn flakes and bake it until it was super crispy. Some people freak out a bit when they think about using mayonnaise in a chicken recipe. But think about what mayonnaise is? Oil and Egg.
When making crispy chicken, I have started coating my chicken with Greek Yogurt. Greek Yogurt makes the chicken really moist. Plus, you can add different flavors. So far, I have made Yogurt-Sriracha Crispy Chicken and Maple-Mustard Yogurt Chicken. Both flavors have turned out really delicious.
I have been a little obsessed with making ranch dip out of Greek Yogurt. I basically treat it like a guiltless pleasure. What is so bad about a few spoonfuls of Greek Yogurt?
This recipe is easy. It only takes a few minutes to coat each piece of chicken.
I have not had my fondue pot for years. But, I still keep my fondue sticks around for moving around raw meat. This way, I don’t have to touch the raw chicken. I actually use my fondue forks all the time. Tearing open raw meat containers, poking baking potatoes, and more.
Greek Yogurt-Ranch Crispy Baked Chicken
2 lbs of raw chicken tenders – or raw chicken cut in the shape you want
1 1/2 cups of Greek Yogurt
1 Package of Greek Yogurt Ranch seasoning
1 cup of panko breadcrumbs
Method: Preheat oven to 350 degrees f. Set up a dipping station. Greek Yogurt and Ranch Mixed in one bowl and breadcrumbs in another bowl. Coat each piece of chicken in the Greek Yogurt ranch, followed by the breadcrumbs. Arrange on a baking sheet and bake in the oven for 20 minutes. Remove the chicken from the oven and eat once it has cooled.
Just like any time I bake the crispy chicken in the oven, my kids gobbled this up. I loved the ranch flavor. It was so tasty.
