You can use any kind of sweet corn in this recipe, but I highly recommend that you use grilled corn.
How to Grill Sweet Corn
- You can grill the corn with the husks on.
- Preheat your grill for 10 minutes
- Add corn to the grill turning every few minutes. (about 10 to 15 minutes.)
- Remove from grill.
This salad is a crowd pleaser! Sometimes, my kids can shy away when they hear the word “salad,” but they won’t when they realize that it’s composed of this smokey sweet corn! You can also make this salad ahead of time. This salad will store in the fridge for up to five days- minus the avocado.
Ingredients
- 6 ears of sweet corn 4.5 cups of corn
- 2 mini cucumbers washed and sliced
- 1/4 cup red onion chopped
- 1 cup grape tomatoes halved
- 1 cup avocado sliced
- 1/2 cup Cotija cheese crumbled
- 2 tablespoons fresh cilantro
- 1/3 cup Dorothy Lynch Dressing & Condiment
Instructions

Turn on the grill and let it heat up for 10 minutes.

Husk Corn

Prepare vegetables: Wash and cut tomatoes, cucumbers, onion, and cilantro. Measure out and crumble cheese.

Grill corn on all sides until it is charred to your liking.

Remove Corn from the grill. Cut the corn off the cob and place it in a dish.

Arrange the vegetables, cheese, and cilantro. Add the chopped avocado last.

Drizzle the salad with Dorothy Lynch and give it a toss before serving.

The Dressing is even great on burgers. It takes the place of katsup and mustard. Or use it with both. It’s so good that I use it on everything
