Paprika Brown Sugar Chicken Thighs

Your family will enjoy this recipe for Paprika -Brown Sugar Chicken Thighs! In my opinion, chicken thighs are the tastiest cut of meat for the price. This recipe is cooked as a one-pot meal and root vegetables to make a quick dinner any night of the week! It would help if you seasoned your chicken and pressure cook this dish in your Instant Pot.   The smokey flavor of paprika tastes excellent with sweet brown sugar. This will quickly become one of your family’s favorite chicken recipes! 

I enjoy making Instant Pot Chicken Thighs.

I like to use the saute function on my Instant Pot to crisp up the skin and the vegetables after I pressure cook them.   I also want to add cornstarch to the cooking juices to create a pan sauce after cooking the thighs. I love how I can cool this entire meal all in one pot, leaving me with fewer dishes at the end of the meal.

This Paprika Brown Sugar Rub is a mixture of spices that will remind you of your favorite BBQ rub, and you will want to make this chicken all year round!

Ingredients 

4-6 chicken thighs- they can be boneless skinless chicken thighs or bone-in

1 cup of water or chicken broth

One teaspoon of butter or olive oil

Three carrots were peeled and cut into chunks 

3-4 potatoes, washed and cut into chunks

Paprika Brown Sugar Rub

One tablespoon of smoked paprika

One teaspoon garlic powder

One teaspoon salt

1/2 teaspoon of cayenne pepper – more or less based on your taste

Four tablespoons of brown sugar

One teaspoon of cornstarch or flour to thicken the sauce 

Optional Ingredients:  You can serve these thighs with rice instead of veggies. And I also recommend making a side salad to have this meal.

  • You can add any root vegetable to this recipe in place of potatoes and carrots and still use the same cook time.
  • This recipe can also be made with chicken breasts. You will probably want to reduce the cooking time if you use breasts instead of chicken thighs.

Storage

These chicken thighs can be stored in the fridge in an airtight container or a freezer bag for 1 week. You can also store these in the freezer for up to 3 months. If you store these in a freezer bag, make sure you let all the air out of it and seal it.

Paprika Brown Sugar Chicken Thighs

Servings 6

Ingredients

  • 4-5 Chicken Thighs Boneless or Bone-in
  • 1 tablespoon olive oil
  • 1 cup water
  • 4 medium carrots peeled and cut into chunks
  • 4 medium-sized red potatoes washed and cut into chunks
  • 1 teaspoon cornstarch

Dry Rub

  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 4 tablespoon brown sugar

Instructions

  1. Mix the dry rub together. Mix together smoked- paprika, garlic powder, salt, cayenne pepper, and brown sugar.

  2. Massage dry rub onto the chicken thighs.

  3. Add water to the bottom of the Instant Pot. Add Chicken thighs into the instant pot.

  4. Add trivet or vegetable steamer on top of the chicken. Add vegetables on top of the trivet.

  5. Secure and lock instant pot lid. Rotate the Steam release valve to "sealing"

  6. Pressure Cook for 12 minutes. Quick-release pressure.

  7. Open Instant Pot lid. Remove vegetables and chicken. Set aside.

  8. Turn on saute mode. Add cornstarch to the cooking juices and thicken the sauce. Add Chicken thighs back into the pot and saute to crisp up the skin. Add the chicken, vegetables, and sauce onto a serving plate. Serve
