Large Batch Instant Pot Sticky Barbecue Chicken Drumsticks

These Sticky Barbecue Chicken Drumsticks are finger-licking good and are always a massive hit with my three sons!  I have gotten into the habit of making larger batches of meat and then eating the leftovers the next day for lunch.  That means you get TWO meals in 30 minutes!   This is also a great recipe to serve at parties! 

Last year, after months of testing, I finally figured out the perfect formula for Sticky Chicken Drumsticks in the Instant Pot.  Chicken drumsticks have become a staple in our house over the last few months.  It turns out that all three of my son’s LOVE barbecue chicken drumsticks.

I like to fill my instant pot with them so I can use them for a round-two recipe the next day.

Here are the ways I like to use the leftover chicken:

Cold, on a salad or as a lettuce wrap.

On a sandwich for lunch the next day.

I also like to serve chicken drumsticks again for dinner.  I love serving leftovers for an easy meal!

This recipe has a short ingredient list!  All you need is:

5 pounds of chicken drumsticks

One onion

1 cup of barbecue sauce

1 cup of water.

Two tablespoons of honey

One tablespoon of Cornstarch

And that’s it!

The cooking process for these chicken drumsticks is mostly hands-off, this meal is made all in one pot, and you won’t even heat your house!

All you need to do is:

1. Chop up the onion and place it in your instant pot. 

2.  Add barbecue sauce, chicken drumsticks, and water.

3. Cook on high pressure for 30 minutes.

4. Remove chicken drumsticks.

5. Add Cornstarch and honey to the barbecue sauce and saute until the sauce is sticky.

6. Drizzle sauce on top of the barbecue chicken drumsticks.

And that’s it!

Large Batch Sticky Barbecue Chicken Drumsticks

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 2 hours 40 minutes

Ingredients

  • 5 pounds chicken drumsticks about 12 drumsticks
  • 1 onion, sliced
  • 1 cup barbecue sauce
  • 1 cup water
  • 1/4 cup honey
  • 1 tablespoon cornstarch

Instructions

  1. Chop onion and add it to the inner pot of your instant pot.

  2. Add Barbecue sauce, water, and chicken drumsticks.

  3. Close and secure lid. Switch the pressure release valve to "sealing"

  4. Cook on high pressure for 35 minutes.

  5. Quick Pressure Release

  6. Open Lid. Remove chicken drumsticks. Arrange in a serving bowl.

  7. Set your instant pot to saute. Add honey and cornstarch and whisk until barbecue sauce thickens.

  8. One the barbecue sauce has thickened, drizzle it over the chicken drumsticks. Serve.

This is such a great dinner to make for those busy back-to-school nights!  Whether your kids are doing virtual school, homeschool, hybrid school, or school full time ( good luck), NOBODY has time to spend all day in the kitchen making dinner!
