I have been an Instant Pot owner for about 18 months now, and some of my favorite things to make in it are simple things. Like sticky rice ready in twelve minutes!
I love making sticky rice in my Instant Pot and I have decided to try some new flavors! If you like this recipe you should also try my Coconut Water Sticky Rice or my Mango Jalapeno Sticky Rice.
I have learned that to make rice ” sticky” you change the rice/water ratio. In this recipe, I replaced some of the liquid with crushed pineapple. Wow, this turned out great!
I love adding ginger to almost all of my Asian- inspired recipes. I keep my ground ginger readily available. I also enjoy cooking with crystallized ginger.
Just in case you’re new at cooking rice in your Instant Pot, here is a video that will help guide you!

Is crystallized ginger candied ginger? Kind of sweet?
I usually use ground ginger. However you can use fresh or crystalized. The pineapple will sweeten everything up
Can you make this pot in pot?
I don’t make rice that way. But if you are comfortable with the method, you can certainly try!
How much salt?
to taste. like 1-2 teaspoons. thanks, Ill add that 🙂
DO you drain the crushed pineapple or include its liquid as well?
Include it.
I have fresh ginger. Do you think i cOuld use this in place of the Crystalized ginger?
Totally, but I might use a little less. Fresh ginger can be pretty potent.
