These Stuffed Crust Breakfast Pita Pizzas are the ultimate back-to-school recipe for any morning of the week! Your kids will LOVE stuffing the inside of their pizza bread with cheese, and you will feel good about all the nutritious toppings to help them start their day! Whole wheat pita bread baked in the oven creates a healthier pizza crust, and you will feel great sending your kids to school after a filling breakfast with meat, veggies, and eggs!

I first discovered breakfast pizza after I moved to Iowa to go to college. I had to report to my friends and family back in Chicago how amazing it was! Yes, it is true, gas station breakfast pizza is an Iowa delicacy, but you can also make it at home and make it much healthier, even if that means stuffing your pita pizza crust with cheese.

There are no rules on how to make breakfast pizza. You can choose to add your favorite breakfast meats such as bacon, chicken, pepperoni, or sausage. You can add vegetables like spinach, onion, tomato, mushrooms, or olives. You can choose to add pizza sauce or not. You can add your favorite cheese, mozzarella cheese, or cheddar cheese. Some people even like hot sauce or red pepper flakes on breakfast pizza. But one ingredient that you almost always find on breakfast pizza is eggs!

There are many great reasons to make meals for your family, including eggs.

* Eggs are a nutritional powerhouse with a great deal of high-quality protein and beneficial cholesterol.

* Eggs contain choline, which supports brain health for kids and adults.

* Eggs are an inexpensive protein at only 17 cents per serving.  They are so versatile! They can be scrambled, boiled, poached, baked, and deviled.

How to make stuffed crust breakfast pita pizzas.  

Instructions:

1. Prepare pizza ingredients.  scramble eggs, cook meat, cut any vegetables you wish to add, and shred cheese.

2. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

3. Using a knife, carefully cut open your pita bread at the seem, and stuff the inside of the pita bread with cheese.

4. Brush the outside of your pita bread with olive oil.

5. Add scrambled eggs to your pizza, along with additional toppings, and sprinkle additional cheese on top.

6. Bake in the oven for 10 minutes or until your pita pizza is somewhat crispy and the cheese has melted.

7. Remove from oven.  Place onto a cooling rack and cut into two slices before serving.

  • 4 Whole Wheat Pitas
  • 1 tbsp olive oil
  • 1.5 cups shredded Colby Jack Cheese
  • 6-8 scrambled eggs

Breakfast Pizza Toppings

  • tomatoes
  • spinach
  • onion
  • olives
  • sausage
  • bacon
  • cheese
