Instant Pot Pineapple Ginger Sticky Rice

I have been an Instant Pot owner for about 18 months now, and some of my favorite things to make in it are simple things.  Like sticky rice ready in twelve minutes!

I love making sticky rice in my Instant Pot and I have decided to try some new flavors!  If you like this recipe you should also try my Coconut Water Sticky Rice or my Mango Jalapeno Sticky Rice

I have learned that to make rice ” sticky” you change the rice/water ratio.  In this recipe, I replaced some of the liquid with crushed pineapple.  Wow, this turned out great!

I love adding ginger to almost all of my Asian- inspired recipes.  I keep my ground ginger readily available.   I also enjoy cooking with crystallized ginger.

Pineapple Ginger Sticky rice

Instant Pot Recipe

Servings 6

Ingredients

  • 1 tablespoon sesame oil
  • 1/8 cup crystallized ginger cut into strips
  • 2 cups crushed pineapple
  • 1 teaspoon ground ginger
  • 2 cups jasmine rice
  • 2 cups water

Instructions

  1. Set your Instant Pot to the saute setting.  

  2. add sesame oil and crystallized ginger.  saute a bit.  

  3. Add pineapple, ground ginger, rice, water, and salt.

  4. Place the lid on the Instant Pot 

  5. Cook on high pressure or the on the rice setting for 12 minutes.

  6. Remove lid and serve. 

This rice tasted awesome.  Think sticky rice with sweet pineapple and spicy ginger.  I can’t wait to make this again.

Is crystallized ginger candied ginger? Kind of sweet?

I usually use ground ginger. However you can use fresh or crystalized. The pineapple will sweeten everything up

I don’t make rice that way. But if you are comfortable with the method, you can certainly try!

I have fresh ginger. Do you think i cOuld use this in place of the Crystalized ginger?

Totally, but I might use a little less. Fresh ginger can be pretty potent.
