The calendar is a little funny in 2018 for us Catholics.   Easter is on April Fools Day and Ash Wednesday lands on Valentines Day!  With both Valentines Day and the kick-off of lent right around the corner, I can’t help but think.

Spring is almost here.  I have almost survived another Iowa winter! 

Last week it warmed up enough for me to open the windows for a while.  And I was glad to do it.  Even though the breeze was cold, my house felt all the more enjoyable.  I felt all the sick germs blowing away. Let’s hope so!

Anyway, I always feel a sense of hope during this season.  We start gaining minutes of sunlight every day, it starts to feel more refreshing outside, then just plain cold, and it is always this time of year I start thinking about fish.  Yes, fish.  What kind of fish am I going to serve my family for dinner this Friday?  I love seafood and always look forward to attending our local fish fry on Friday.  Plus, I love making recipes at home.

This Greek salad topped with crispy fish tasted excellent!  I love mixing romaine lettuce with kale.  Plus, I added some of my favorite flavors!  Tangy feta cheese, juicy tomatoes, kalamata olives and don’t forget that perfectly flaky fish fillet!

Gorton’s Seafood is delicious and convenient for everyday life.  It is versatile, can be added all sorts of cuisine, and easy to prepare.  Plus, it is a great way to get your fish in!

I was able to find Gorton’s Seafood at Walmart in the freezer aisle.  Just look for it with the frozen fish!

Crispy Fish Fillet Greek Salad  Serves 2

Ingredients 

One head of romaine lettuce, chopped

2 cups of kale, chopped

1/4 cup chopped baby tomatoes

1/8 cup chopped kalamata olives

1/8 cup chopped red onion

Two tablespoons of crumbled feta cheese

1/8 teaspoon of ground pepper

Three tablespoons of Greek Balsamic vinaigrette

2 Gorton’s Crispy Fish Fillets 

Greek Balsamic Vinaigrette 

1/3 cup of balsamic vinegar

1/3 cup of olive oil

1/4 dried oregano

1/4 teaspoon salt

dash of garlic powder

Method: Cook Gorton’s Crispy Fish Fillets according to the instructions on the package.  Wash and chop lettuce and arrange on a plate or in a bowl.  Wash and cut all of the other vegetables, and arrange on the salad. And sprinkle with feta cheese.  Drizzle salad dressing on top of the mixture and toss the salad.  Remove the crispy fish fillets from the oven and arrange on top of the salad.  Enjoy!

Adding fish to a greek salad is a great alternative to chicken. And it doesn’t have to be hard to prepare. There are some tasty frozen varieties out there.
