Your taste buds will burst when you try this Everything Bagel Panzanella Salad! This salad is the perfect lunch, dinner, or side dish to enjoy during late summer when tomatoes are in full bloom! This salad has crispy bagel croutons, sweet tomatoes, crunchy cucumbers, and gooey goat cheese, all tossed with a tangy vinaigrette and topped with everyone’s favorite Everything but the bagel seasoning!
My three-year-old son, William loves tomatoes. Like, he doesn’t eat them because I ask him to- would choose them over most foods-sneaks them out of the garden- and steals them off his brother’s plates- loves them.
This year, we planted A LOT of baby tomatoes in our garden, and I finally was able to collect enough of them to make this fantastic Everything Bagel Panzanella Salad. I happen to be a HUGE everything bagel fan. I always choose everything bagel when I visit a bagel shop. Out here in Iowa, I need to make do with a bottle of ” Everything but the bagel” seasoning that I love to sprinkle on almost Everything I eat.

Panzanella Salad is traditionally a Tuscan salad using stale bread. The stale bread is soaked in a tangy vinaigrette and is tossed with tomatoes, cucumbers, and onions. I switched up this salad by making the croutons out of bagels and adding gooey cheese and A lot of Everything but the bagel seasoning! This salad was so satisfying!
This Everything Bagel Panzanella Salad is easy to make! All you need is:
Bagels
Olive oil
Vinegar
Salt and Pepper
Everything But the Bagel seasoning
Tomatoes
One cucumber
chopped onion
Goat cheese- or I suppose you can use cream cheese.
This salad turned out so good! This salad makes an excellent side dish but is filling enough for a meal on a hot summer day. All the flavor will rock your world! This salad is simple to make. All you need to do is
- Make Bagel croutons by toasting bagel pieces in the oven.
- Mix up a simple vinegarette
- Slice tomatoes, onions, and cucumbers.
- Toss the croutons, vegetables, and vinegarette together.
- Top the salad with goat cheese and a generous amount of Everything but the bagel seasoning.
- Give the salad enough time for thee bagel croutons to soak in the vinegarette.
- Eat!
Everything Bagel Panzanella Salad

Ingredients
- 2 cups bagel croutons
- 2 cups grape tomatoes halved
- 1 cucumber sliced
- 1/2 onion thinley sliced
- 1 teaspoon dill
- 3 tablespoons soft goat cheese sliced into pieces
- 2 tablespoons Everything bagel seasoning
- 1/2 cup vinegerette
Bagel Croutons
- 2 cups bagel pieces
- 1 tablespoon olive oil
- 1 tablespoon Everthing but the bagel seasoning
Panzanella vinegerette
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 1 teaspoon dijon mustard
- salt and pepper
Instructions

Preheat oven to 350 degrees.

Cut bagels into pieces. Arrange them on a sheet pan. Drizzle them with olive oil and Everything but the bagel seasoning.

Cook the croutons in the oven for 10 minutes, or until they become crispy.

Mix vinegarette together and set aside.

Cut tomatoes, cucumber and onion.

Toss vegetables, bagel croutons, and vinegarette togther. Top with goat cheese and Everything but the bagel seasoning.

Let the salad marinate for at least an hour before serving.
