Three Ingredient Lemon Nice Cream


Happy New Year!

Am I the only one Freaking out just a little that it’s 2015?  Seriously, time is going by too fast, and I hate it!  For New Years, my family and I went to a get-together with our college friends, and now we have been friends with most of these couples for ten plus years, and I can’t believe it.

But maybe I should sit back and Make The Best of Everything for a minute.   I CAN’T control how old I am getting or how time is flying by WAY TOO FAST  ( I just turned 32 last week).   But I CAN control to take care of myself and to eat healthily so I can live life to the fullest!

This THREE ingredient blender ice cream has no added sugar and is vegan.  ( although you can add some yogurt or a little milk if you like) It also tastes terrific.   Best part? My kids love it!

It’s a healthy treat. I can feel good about making for them! This Healthy Lemon Ice Cream reminds me of lemon Gelato.  Adding the lemon zest makes this full of strong lemon flavor. lemon1000


Three Ingredient Lemon Ice Cream

Serves: serves 2-4
  • 2 Frozen Bananas
  • 1/2 Lemon- juice and zest
  • One tablespoon vanilla extract
  • optional one tablespoon of milk OR 1 tablespoon of plain yogurt ( this will add creaminess)
  1. The night before, place unpeeled bananas in a freezer bag and freeze the bananas overnight. Place frozen bananas, lemon juice, lemon zest, and vanilla extract in your blender. Blend your mixture until you get an ice cream-like texture. You may have to stop your blender a few times to “scrape the sides” of the mixer or to stir the mixture a bit

I hope this wonderfully healthy dessert helps you keep your New Years Resolutions!  I think the more lemon zest you add, the better this recipe tastes!  Now, I want warm weather to eat this ice cream.  ( it’s been about 10 degrees, here in northern Iowa)
