Brown Butter ( Buerre Noisette) is a classic French staple in the kitchen.  Brown Butter is melted butter with accelerated flavor, can be made in less than 10 minutes, and has a nutty and bold flavor.  These Instant Pot Beef Tips make a mouthwatering meal with a short cook time.  Although you will take a few extra steps to brown the butter at the beginning of the cooking process, this easy weeknight meal calls for only a few ingredients and will wow your family!

This Brown Butter Beef Tips Instant pot recipe is rich and decadent.  I have no problem feeding my family meals with honest-to-god, rich ingredients.  We also have nights of eating lean chicken and broccoli and nights where we feast on Brown Butter Beef Tips.   Like the French eats, this dish is rich, and a little goes a long way.  Don’t think about volume eating when you make this; savor every bite.  Make sure you save all of the sauce from your instant pot. You can thicken it using the saute function to make rich brown gravy.

What cut of meat should I use?

I like cooking inexpensive cuts of meat in my instant pot because pressure cooking makes them taste luscious and tender.  You can choose to use a higher quality cut of meat for this recipe, but a tougher sew meat will work just fine!  This Instant pot beef tip recipe can be a delicious, budget-friendly meal!

What are the Brown Specs in Brown Butter?

The brown specs in brown butter are toasted milk solids.  They’re where most of the flavor in brown butter comes from, so make sure you scrape them out of the pan!

Instructions on how to make brown butter in your Instant Pot

  1. You will use the saute function on your Instant Pot to brown the butter.  The Instant Pot will get hotter than a saucepan on the stove, so browning the butter will be time-sensitive.  Hit the saute button and cook the butter for 3 minutes. Make sure you stir the butter the entire time.  Then press the cancel button,  and continue stirring the butter while the pan cools.
  2. Cut butter into pieces evenly so that the butter will cook evenly
  3. Don’t stop stirring
  4. Brown butter is melted butter with an accelerated flavor.  Melt butter until the butter sizzles and foams.  It will turn into the most incredible flavored ingredient.

I have the beef,  potatoes, and carrots cooked together in the Instant Pot with brown butter, herbs, and water to make a quick meal that is nourishing, rich, and delicious.  You don’t need to use the same side items as I did.   Any root vegetable will cook well as a side dish in this one-pot meal.  You could also make mashed potatoes with the potatoes.

This meal only calls for a few ingredients.

Twp lbs of beef tips, steak, stew meat, or you can cut a beef tenderloin into chunks. .  You can also use chopped-up chuck roast or sirloin steak.  You will want to cut down more significant cuts of beef into 1-inch cubes.

Six carrots, peeled and chopped

1 pound of baby potatoes, washed

Brown butter

Garlic

Your favorite herb to pair with beef.  I used thyme. Sea Salt

Optional ingredients 

Cornstarch if you want to thicken the sauce to make a cornstarch slurry.  You will get a sort of gravy to pour over your meal.

You can top this off with black pepper, parsley, or onion, or add beef bouillon beef broth or Worcestershire sauce for an extra rich flavor.

You can add additional ingredients if you like to cook off the cuff.  Mushrooms would also taste fantastic with this meal.   If you don’t have potatoes, you can serve these electric pressure cooker beef tips over mashed potatoes, white or brown rice, egg noodles, or sweet potato mash.

Can I make this recipe in my slow cooker?  

Yes!  Just brown your butter on the stovetop the traditional way and add the butter to the chunks of beef, potatoes, and carrots in your slow cooker.  Cook for 4-6 hours on low.  Slow cooking stew meat is another great way to achieve tender beef tips.

Brown Butter Beef Tips

Ingredients

  • 1/2 cup butter
  • 2 pounds beef cut into 1-2 inch chunks
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme
  • 1 cup of water
  • 6 large carrots cut into chunks
  • 1 pound baby potatoes

Instructions

Brown Butter

  1. Cut butter into even slices and place them into the inner pot of your Instant Pot. Press the saute funtion.

  2. Constantly stir the butter for 3 minutes before pressing "cancel," continue stirring the butter as the heat winds down. The butter should sizzle and foam. You should see white specs in the butter that will tell you the butter has been browned.

  3. Add beef, salt, and thyme to the pot and mix well with the butter.

  4. Add 1 cup of water.

  5. Add trivet or vegetable steamer to the pot, and add carrots and potatoes on top of the trivet.

  6. Secure Instant Pot lid and roatate the pressure release valve to "sealing"

  7. Cook on high pressure for 10 minutes. Quick release pressure.

  8. Let beef rest for 10 minutes before serving.

  9. Arrange a plate with beef, potatoes, and carrots. Drizzle leftover butter sauce on top. Serve.

Nutrition: This meal is rich in protein and not low in calories, but this meal will leave you feeling satisfied and full.
