Apple Cider Donut Cookies

These Apple Cider Cookies are pillowy soft and are reminiscent of the Apple Cider donuts I buy from our local apple festival each year. They are soft on the inside and crispy on the outside. They are coated with cinnamon and sugar and make the perfect fall cookie! Your kitchen will smell like fall spices while these cookies are baking in the oven! These made-from-scratch cookies will deliver big flavors!

Here in the midwest, no fall season is complete without a family trip to the pumpkin patch or apple orchard on a warm fall day!  Is there anything more midwest than walking through a corn maze with an apple cider donut in hand?   Apple cider donuts are a popular fall treat!  These apple cider donut cookies are cakey, soft, and have the perfect apple flavor.  You will love the way that these taste!

Ingredients 

1 1/2 cups of All-Purpose Flour

1/2 teaspoon of salt

1/4 teaspoon of baking soda

1/4 teaspoon of baking powder

1/2 cup of granulated sugar

One teaspoon of cinnamon

1/2 teaspoon nutmeg

One teaspoon of pure vanilla extract

1 Egg

1/2 cup softened unsalted butter

1/3 cup of Apple Cider.  If apple cider is unavailable, you can make apple cider using an apple cider drink mix.

One tablespoon of Cinnamon and Sugar for coating

Equipment

Medium Bowl for the cookie dough and a small bowl for the cinnamon sugar mixture

Hand Mixer, stand mixer or whisk.

Oven

Baking Sheets or sheet pans.

Parchment paper

Instructions

        1. Preheat the oven to 350 degrees.  Line cookie sheets with parchment paper.
        2. Whisk dry ingredients in a small bowl: flour, salt, baking powder, soda, sugar, and cinnamon.  Set aside.
        3. Using an electric mixer, wet cream ingredients: butter, vanilla, egg, apple cider,
        4. Slowly add flour mixture to the wet ingredients. And mix well.
        5. Refrigerate dough for 30 minutes.
        6. Roll cookie batter into balls using your cookie scoop. Coat each ball with cinnamon and sugar and place dough balls evenly on a cookie sheet lined with parchment paper.
        7. Bake cookies for 10-12 minutes.
        8. Let cookies cool on a cooling rack and serve.

What if I can’t find apple cider?

Apple Cider is usually in-store during the fall and winter seasons. If you want to make these cider cookies out of season, I suggest buying the hot apple cider mix packets in your grocery store’s tea/coffee aisle.

You can make this cookie dough ahead of time

    • Refrigerate dough for up to two days.
    • Freeze dough in airtight freezer bags for up to two months.
    • You can also make the cookie balls and freeze them from frozen.
    • Baking Tip-The recipe calls for you to refrigerate the cookie dough for up to 30 minutes.   You can skip this step if you’re in a pinch.  The cookies won’t roll into a ball as quickly, but they will still taste delicious!
