I cannot say enough good things about these Beef Stew Meat Chili Tacos. This is a restaurant-quality meal made at home in your Instant Pot in 30 minutes! I have started loving cooking stew meat in my Instant Pot! Not only can you cook stew meat into a variety of meals in less than 30 minutes, but the beef will cook up so tender and flavorful it will melt in your mouth!
I love my Instant Pot’s ability to cook inexpensive cuts of meat into tender, mouthwatering meals. This recipe tastes fancy enough for a special occasion but is incredibly easy and takes less than 30 minutes from start to finish. My Iowa-born husband, who knows good beef approved, as did all three of my kids. These sandwiches are budget-friendly but taste more like a more expensive cut of meat when pressure cooked. Making tacos using stew meat was a great way to switch up taco night in our house! In my opinion, these seemed fancier than ground beef tacos. This is a delightful budget-friendly meal that should be added to your dinner repertoire! Cooking this meat in tomato sauce and chili seasonings made this meal rich tasting!

This was so yummy! I did add a little salt and pepper and only did 1.5 Tbls Cayenne pepper. I then rolled the meat up in soft tacos and baked in the oven with cheese and white sauce. My husband loved this too! Great flavor and so easy!
