White Chocolate Macadamia Nut Banana Cookies

After my Banana Chocolate Chip Cookies and my Banana Chocolate Chip Cookie Bars became widely popular, I decided to keep going.  These White Chocolate Macadamia Nut Banana Cookies are just sweet enough.  They are sweetened with bananas and white chocolate chips.  Did you know that one cup of sugar has 700 calories in it?  You’re saving a lot of calories by not adding that sugar to these cookies.  Yes, these cookies have some added sugar, but just enough.  My kids devoured these cookies and begged for more.

These cookies have added sugar, but all of the sugar comes from white chocolate chips, and the rest of the sweetness comes from bananas.   These cookies turn out cakey and really good.  These are the perfect treat and just sweet enough.  You can get really creative with these cookies and add your favorite cookie fixings.

This recipe is easy to throw together.  These Cookies bake in 10-12 minutes and have a short ingredient list.  

All you need is:

1/3 cup of room temperature salted butter

One mashed banana- ripe but not too ripe

One teaspoon pure vanilla extract

One egg

1 cup of flour

One teaspoon baking powder

1/4 teaspoon salt

1/2 cup of white chocolate chips

1/4 cup of macadamia nuts.

This recipe is so fast. It can quickly be whipped up for an after-school snack or a nighttime dessert on a whim.

I recommend using a mixer or a food processor when mixing the ingredients for these cookies.  You will want to make sure that the banana gets thoroughly mixed in. 

All you need to do is

  1. Preheat oven to 350
  2. Mix wet ingredients- butter, banana, vanilla, and egg
  3. Mix dry ingredients- flour, baking powder, salt
  4. Add White Chocolate Chips and Macadamia Nuts 
  5. Line a baking sheet with parchment paper
  6. Scoop a 1.5-inch amount of dough onto the baking sheet. Keep the cookies 1-2 inches apart. Press down on each cookie with a fork.
  7. Bake in the oven for 10-12 minutes.

Remove from the oven and eat when the cookies have cooled a bit.

White Chocolate Macadamia Nut Banana Cookies

Ingredients

  • 1 medium mashed banana ripe but not too ripe
  • 1/3 cup room temp butter
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 cup all-purpose flour use 3/4 cup if using whole wheat
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips or more
  • 1/4 cup macadamia nuts or more

Instructions

  1. Preheat oven to 350

  2. Mix wet ingredients- butter, banana, vanilla, and egg

  3. Mix dry ingredients- flour, baking powder, salt

  4. Add white chocolate chips and macadamia nuts

  5. Line a baking sheet with parchment paper
