These bowls can be made ahead and stored in the fridge days in advance. They have hearty farro, savory bleu cheese, crunchy cucumbers, baby tomatoes, corn, and avocado, which all pair wonderfully with Dorothy Lynch.

Dorothy Lynch was originated in Nebraska in the late 1940s. The recipe was created by a lady named none other than Dorothy Lynch! Dorothy Lynch Dressing & Condiment is sweet with a hint of spice, and it is gluten-free, contains no MSG, cholesterol, or trans fats. Dorothy Lynch is my favorite midwestern condiment. It is sweet and flavorful, and it tastes delicious on almost any meal you can think of!

I used Dorothy Lynch in two different ways in this recipe. – I cook the chicken on the stove in the dressing. And I add a small container of Dorothy Lynch Dressing and condiment to each meal prep bowl, meant to be drizzled on top.
Here is what you need for these Grain Bowls
Cooked Farro
Boneless skinless chicken tenderloins
Dorothy Lynch Dressing & Condiment
Grape tomatoes
Frozen corn, thawed
Cucumber slices
Avocado
Blue cheese
- Ingredient Tip- If you plan on making these ahead of time, I would pack a whole avocado and slice it right before eating.
The blue cheese pairs perfectly with the sweet and spicy Dorothy Lynch. If you’re not a fan of blue cheese, I would recommend adding crumbled goat cheese.
Ingredients
- 6 cups cooked farro
- 1 pound boneless skinless chicken tenderloins
- 1 tablespoon cooking oil
- 1/3 cup Dorothy Lynch Dressing and Condiment
- 1/2 cup grape tomatoes sliced in half
- 1 cup frozen corn thawed
- 1/2 cup English Cucumbers sliced
- 1 avocado pitted and sliced
- 1/3 cup crumbled blue cheese
- Dorothy Lynch Dressing and Condiment1 garish
Instructions

Cook the Farro according to the instructions on the package.

Cut up the chicken tenders into chunks.

Pour cooking oil into a saucepan over medium heat. Place chicken in the saucepan and pour the Dorothy Lynch Dressing and Condiment over the chicken. Cook until the chicken is all the way cooked through.

Prepare your vegetables. Slice tomatoes, cucumber, and avocado. Cook the corn in the microwave and let it cool in the fridge.

Prepare your grain bowls. Place a 3/4-1 cup of farro in each bowl. Add chicken, tomatoes, cucumbers, avocados, corn, and blue cheese into each grain bowl.
