I don’t think I can say this too many times on this blog. “It is PRICELESS to throw food in the crock pot or oven and WALK AWAY from the kitchen on those days and nights my boys really need ME.”
And that is why planning freezer meals is so important. And I have an easy freezer meal for you today! I just happened to have some Costco pesto and Trader Joe’s Sun dried tomatoes in my fridge that I needed to use up, freeze or pitch. So I made a little impromptu freezer meal out of them. ( this was actually a while back) I cut up about 2 lbs of raw boneless skinless chicken breast and added ALL the pesto and ALL the sun-dried tomatoes. I stuck it in the freezer. Just a week or two ago, when my husband was in China, I pulled it out and threw it in the slow cooker. Then, around dinner time I threw it over some pasta. This was a wonderful and flavorful meal for both myself and my two-year old. I topped our pasta with mozzarella cheese.
