Pesto & Sun Dried Tomato Slow Cooker Chicken

I am pretty sure I have told you guys before. Whenever I buy chicken inexpensively, I like to semi prepare it and put it in the freezer.

I don’t think I can say this too many times on this blog.  “It is PRICELESS to throw food in the crock pot or oven and WALK AWAY from the kitchen on those days and nights my boys really need ME.” 

 And that is why planning freezer meals is so important.  And I have an easy freezer meal for you today!  I just happened to have some Costco pesto and Trader Joe’s Sun dried tomatoes in my fridge that I needed to use up, freeze or pitch.  So I made a little impromptu freezer meal out of them.  ( this was actually a while back) I cut up about 2 lbs of raw boneless skinless chicken breast and added ALL the pesto and ALL the sun-dried tomatoes.  I stuck it in the freezer. pesto1112.jpg Pesto111.jpg Just a week or two ago, when my husband was in China, I pulled it out and threw it in the slow cooker.  Then, around dinner time I threw it over some pasta. pestocoll1.jpg This was a wonderful and flavorful meal for both myself and my two-year old.   I topped our pasta with mozzarella cheese.

    hoe long do you leave frozen chicken in the crock pot? I just bought a crock pot and am still learning how to use it! This recipe looks delicious and I can’t wait to try it.

     
    • Since writing this post- I would say I would use defrosted chicken. Otherwise your final product will end up watery. I would at least de frost it for 10 minutes in the microwave. ( on defrost)

       
  2. You mentioned that you had some Costco pesto and Trader Joe’s Sun dried tomatoes in your fridge that you needed to use up, so I assume each jar was partially used. How much of each jar did you use for this recipe?

    • mmmm I am trying to remember, this was over a year ago… I want to say the sun dried tomatoes had 3/4 left. and the pesto had little less than 1/2 left. Hope this helps 🙂

       
  3. How long does this cook in the crockpot after defrosting? I made the freezer bag and can’t wait to try it!
