Funfetti Shortbread Cookies

Shortbread cookies are a classic favorite during the holiday season.  This melt-in-your-mouth funfetti shortbread cookie is easy to make and is perfect for dunking in a hot cup of coffee or a cold glass of milk!

Shortbread is an American classic cookie during the holiday season.  Scottish settlers initially brought over the recipe. This cookie only requires a few ingredients and can be a canvas for creativity!   These funfetti shortbread cookies have a melt-in-your-mouth texture and are festive!

Ingredients

1/2 cup  unsalted softened butter

1/4 cup granulated sugar

1/4 cup powdered sugar

1/4 teaspoon salt

One teaspoon of vanilla extract

1 cups all-purpose flour

1/4 cup sprinkles

Recipe Note:  You can play around with the flavors in this recipe by using different extracts instead of vanilla extract.  Lemon extract, almond extract, or peppermint extract would also work.  I don’t recommend mixing them.

Recipe Note: You can use any color sprinkles you like.  Rainbow sprinkles will also work wonderfully for birthdays.

Instructions

1. Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.

2. In a large bowl, cream together the butter, granulated sugar, powdered sugar, and vanilla extract until light and fluffy.

3. Gradually add the flour and salt, mixing until just combined. Fold in the sprinkles.

4. Shape the dough into a disk, wrap it in plastic wrap, and chill dough for at least 30 minutes.

5. Using a cookie scoop, make the dough 1 inch apart on a baking sheet and press down with the tines of a fork.

5. Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are golden brown.

6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Note: You can use a medium-speed electric or stand mixer when making this recipe.  Make sure you use the paddle attachment if you use a mixer; set it at medium speed.

Storage

Store these cookies in an airtight container at room temperature for three days.  You can also store the cookies in the fridge for up to a week or freeze the cookies for up to three months.

Tips for the best cookies

1. Bake the cookies on a baking sheet that has been lined with parchment paper. This will prevent the cookies from sticking to the pan.

2. If decorating, let the cookies cool completely first.

3. Shortbread Cookies are versatile.  You can eat them plain or decorate them.

4. These cookies taste delicious when dunked in a cold glass of milk or a piping hot mug of coffee, tea, or hot chocolate.
