There is no need to head out to the store to get tortilla chips for taco night; if you have corn tortillas handy, you can easily bake your own in the oven. These chips come out super crispy, and you control the seasonings. Tortilla chips with a hint of lime have always been my favorite, but now I make them at home using lime juice instead of the lime powder with which the store-bought ones are made.
These taste exactly like the chips you find at Chipotle.
Ingredients needed
6-10 corn tortillas- depending on how many chips you want to make
Four tablespoons of oil – you can use olive oil, canola, avocado, or sunflower.
Two tablespoons of fresh lime juice
One teaspoon of lime zest
Salt to taste
Chili lime seasoning salt- I use the chili lime seasoning found at Trader Joe’s.
Instructions
1. Preheat oven to 350
2. Cut tortillas into triangles and place them on baking sheets lined with parchment paper.
2. Using a pastry brush, lightly brush oil over the chips and season them with lime juice, zest, salt, and chili-lime seasoning.
3. Cook them in the oven for 12-15 minutes or until they are crispy and golden brown.
4. Let cool slightly before eating and serve. Depending on how many chips you want, you may need to make a few batches.
Storage
Wait until the chips have cooled before storing them in an airtight container. You can store these at room temperature for up to a week.
